Abstract

"PROCESSO PARA OBTENçãO DE COMPOSIçãO LIPìDICA E COMPOSIçãO LIPìDICA OBTIDA". Partindo de uma matéria prima básica contendo qualquer tipo de óleo vegetal, tais como: soja, algodão, milho, girassol, canola, palma e seus derivados, oleina de palma e estearina de palma, palmiste e seus derivados, oleina de palmiste e estearina de palmiste, promover a formação de "blends" ou misturas desse referidos óleos vegetais, obtendo-se uma composição em ácidos Graxos constituída por: ácidos Graxos Saturados (20 a 40%); ácidos Graxos Mono-insaturados (20 a 40%); e ácidos Graxos Poli-insaturados (20 a 40%); sendo essa mistura submetida às etapas de: hidrogenar a mistura; inserir na mistura hidrogenada, óleos líquidos sem hidrogenar e/ou com óleo de palma e seus derivados e/ou com óleo de palmiste e seus derivados; interesterificar quimicamente as misturas previamente balanceadas, obtendo-se as curvas de sólidos adequadas para cada aplicação; desodorizar as misturas em condições adequadas, minimizando a formação de isómeros trans; adicionar o Omega 3 em quantidade previamente estabelecida de acordo com sua aplicação, em condições adequadas, evitando a possibilidade de oxidação da composição; estabilizar a composição lipídica por meio de adição de estabilizantes apropriados e cristalização em condições adequadas para que todo Omega 3 e demais triglicerideos líquidos fiquem encapsulados nos cristais dos triglicerideos sólidos; e acondicionar, estocar e transportar em condições que evite a quebra dos cristais especialmente desenvolvidos no processo de cristalização com a oxidação da composição lipídica. A composição lipídica obtida é constituída por uma parcela de triglicerídeos com uma curva de sólidos para a fabricação de alimentos com baixo teor de ácidos graxos trans (< 3%), enriquecida com ácidos graxos poli insaturados EPA (ácido eicosapentaenoico) e DHA (ácido docosahexaenoico), encapsulados em quantidade suficiente para que 100 gr do produto final contenha no mínimo 10% da IDR."PROCESS TO OBTAIN LIPOSTIC COMPOSITION AND LIPOSTIC COMPOSITION OBTAINED". The lipid composition obtained consists of a portion of triglycerides with a solid curve for the manufacture of foods with a low content of trans fatty acids (<3%), enriched with polyunsaturated fatty acids EPA (eicosapentaenoic acid) and DHA (docosahexaenoic acid) ), encapsulated in sufficient quantity so that 100 gr of the final product contains at least 10% of the IDR.
