PROCEDE ET DISPOSITIF POUR LE TRAITEMENT THERMIQUE DE PRODUITS
La présente invention concerne un procédé pour le traitement thermique de produits, dans lequel on le chauffe à la suite du broyage ; elle concerne également un dispositif pour la mise en oeuvre de ce procédé.
De tels procédés et dispositifs sont utilisés, à titre d'exemple, dans l'industrie de la viande, par exemple pour la fabrication de conserves de saucisses. Le document DE-C-2 044 228 décrit ainsi un dispositif pour hacher et pour traiter thermiquement la viande, dans lequel de la vapeur est directement introduite via des ouvertures d'adduction de vapeur dans le produit haché. Le document DE-C-1 181 902 décrit également un procédé de fabrication de conserves de saucisses, dans lequel de la vapeur d'eau surchauffée est introduite par pulvérisation, sous le remous de la masse crue destinée à être mise eu saucisse.
Cet état de la technique présente cependant d'importants inconvénients. Ainsi, les réglementations en vigueur en matière de produits alimentaires ne permettent pas l'addition d'eau extérieure, qui se forme par condensation. En outre, on ne dispose pas, en général, de vapeur spécialement purifiée pour le traitement thermique, et, de ce fait, la vapeur utilisée contient une pluralité de composants souillants qui sont entre autres, ajoutés lors du traitement de chaudière et qui peuvent être inquiétants ou même dangereux dans les produits alimentaires. Finalement, le chauffage direct à la vapeur est irrégulier. On constate des surchauffes locales, tandis que d'autres parties ne sont chauffées que de manière insatisfaisante.
En connaissance de cet état de la technique, le but de la présente invention vise à fournir le procédé du type susmentionné ou un dispositif correspondant pour la mise en oeuvre dudit procédé de manière à éviter les inconvénients précités et à assurer un chauffage unifor-

me du produit ainsi que la sécurité contre l'introduction de souillures, tout en empêchant simultanément l'addition d'eau extérieure.
Le but de la présente invention est atteint par un procédé caractérisé en ce qu'on mène le produit à travers un espace annulaire dont les parois intérieure et extérieure sont chauffées.
Suivant l'invention, le dispositif pour la mise en oeuvre du procédé est caractérisé en ce qu'il comporte un corps intérieur essentiellement cylindrique qui peut être chauffé ainsi qu'un tube qui est concentrique au corps intérieur et qui peut être chauffé par l'extérieur, tube dont le diamètre intérieur est plus grand que le diamètre extérieur du corps intérieur, le produit à traiter pouvant être mené dans l'espace annulaire compris entre le corps intérieur et le tube, et pouvant être chauffé par l'intermédiaire des surfaces relativement grandes des faces intérieure et extérieure de l'espace annulaire.
Suivant l'invention, le produit traverse un espace annulaire dont les parois extérieure et intérieure sont chauffées. Par ce chauffage indirect du produit, ou empêche toute addition de corps étrangers de telle sorte que la pureté du produit à traiter est assurée. La surface relativement grande qui limite l'espace annulaire assure un chauffage régulier du produit de telle sorte que l'on peut obtenir, par exemple lors de l'utilisation dans l'industrie de la viande, des conserves de saucisses de qualité élevée. Comme source de chaleur, on utilise de préférence de la vapeur d'eau qui permet de transmettre une quantité de chaleur relativement élevée et aisément réglable à travers les parois limitant l'espace annulaire.
Selon une forme d'exécution préférée de l'invention, le corps intérieur se présente sous la forme d'une vis qui peut être entraînée par un moteur autour de son axe longitudinal. Cette forme d'exécution permet un

transport régulier du produit à traiter à travers l'espace annulaire, le traitement thermique pouvant être effectué au cours du transport.
Il est avantageux d'utiliser un corps intérieur creux et de le munir d'une ouverture d'admission de vapeur qui, sous une certaine pression, permet de maintenir le corps intérieur à une température élevée uniforme. Pour éliminer le condensat de l'espace intérieur de la vis, on prévoit avantageusement un dispositif d'évacuation du condensat.
Le tube extérieur se présente avantageusement sous la forme d'un cylindre fixe à double paroi, qui est muni d'une ouverture d'admission de vapeur vers l'espace intérieur. De cette manière, on peut également maintenir la surface extérieure de l'espace annulaire à une témp- érature uniformément élevée en maintenant une pression de vapeur constante dans l'espace intérieur du cylindre à double parois. Cet espace intérieur est avantageusement muni d'une ouverture d'évacuation du condensat pour éléminer le condensat de cet espace.
Suivant une forme d'exécution préférée de la présente invention, et pour améliorer la régularité du transport du produit à travers l'espace annulaire, le tube est muni, sur sa face intérieure, de rayures qui sont dirigées substantiellement suivant l'axe du tube. Les rayures et la vis assurent, en combinaison, un transport avantageux du produit à traiter. De préférence, le tube est muni à l'extérieur d'une isolation qui maintient les pertes calorifiques à un niveau le plus bas possible.

Les figures 1 et 2 concernent un dispositif tel qu'il est par exemple utilisé dans l'industrie de traitement de la viande. Comme le montre, en particulier, la figure 1, le dispositif est bridé au boîtier 2 de la vis d'un moulin à viande. L'entraînement s'effectue par l'intermédiaire de la vis 1 du moulin a viande ainsi que par l'intermédiaire d'un têton de couteau et d'entraînement 3. Le dispositif est fixé au boîtier de la vis 2 au moyen d'un écrou.
Le corps cylindrique intérieur 4 est représenté en coupe partielle à la figure 1. Le corps intérieur 4 est muni, à sa surface extérieure, de nervures hélicoïdales qui servent à faire avancer le produit à traiter.
Le corps intérieur 4 se présente sous la forme d'un tube cylindrique qui est obturé du côté tourné vers le boîtier 2 de la vis du moulin à viande. A son extrémité avant, le corps intérieur comporte un bout d'arbre qui est muni, à son extrémité, d'un évidement à six pans creux dans lequel peut s'engager le têton de couteau et d'entraînement 3. Le bout d'arbre sert donc de logement et d'entraînement du corps intérieur 4. A sa face opposée au boîtier 2, le corps intérieur est muni d'une paroi radiale qui présente en son centre une ouverture d'admission de vapeur d'eau, qui supporte simultanément un dispositif d'aspiration du condensat 10 qui pénètre à l'intérieur 8 du corps intérieur 4.
Un tube extérieur 5 est disposé de manière coaxiale par rapport au corps intérieur 4, le diamètre intérieur de ce tube n'étant que faiblement supérieur au diamètre extérieur de la vis enveloppant le corps intérieur 4. Le tube extérieur 5 se présente sous la forme d'un tube à double parois, une ouverture d'admission de vapeur et une ouverture d'évacuation du condensat étant prévues dans l'espace intérieur. comporte, sur sa surface extérieure, une isolation 6. Le tube extérieure constitue le carter de vis du dispositif et comporte sur sa face intérieure, comme le montre plus particulièrement la figure 2, des rayures 7 qui sont dirigées substantiellement en direction axiale.
A son extrémité avant, le tube 5 comporte une bride annulaire, par laquelle il est maintenu fixe au boîtier de vis 2. Au côté opposé, le tube 5 est fermé par un couvercle radial. Ce couvercle comporte un bout d'arbre centré muni d'un forage au centre destiné au logement ainsi qu'à l'admission de la vapeur et à l'évacuation du condensat pour le corps intérieur 4. Un joint d'étanchéité rotatif 9 pour la vapeur et le condensat est raccordé au bout d'arbre.
Du côté opposé au boîtier de vis 2 du moulin à viande, une ouverture d'évacuation du produit traité (non représentée) est disposée dans l'espace annulaire compris entre le corps intérieur 4 et le tube extérieur 5.
Le produit haché quittant le moulin à viande et qui doit subir un traitement thermique est envoyé dans l'espace annulaire compris entre le corps intérieur 4 et le tuyau extérieur 5. Le corps intérieur 4 formant la vis et les rayures 7 du tube extérieur 5 agissent ensemble et transportent le produit en direction axiale à travers l'espace annulaire. On introduit de la vapeur à une pression prédéterminée à l'intérieur de la double paroi du tube extérieur 5 et à l'intérieur du corps intérieur 4, les parois situées l'une en face de l'autre étant ainsi maintenues à une température substantiellement constante. La chaleur est uniformément absorbée par le produit mené à travers l'espace annulaire.
La profondeur radiale relativement faible de l'espace annulaire assure une transmission complète et uniforme de la chaleur dans le produit, de telle sorte que le produit qui quitte le dispositif par l'orifice d'évacuation présente une qualité élevée en tant que conserve de saucisse.

METHOD AND DEVICE FOR THE HEAT TREATMENT OF PRODUCTS
The present invention relates to a process for the thermal treatment of products, in which it is heated after grinding; it also relates to a device for implementing this method.
Such methods and devices are used, for example, in the meat industry, for example for the manufacture of canned sausages. Document DE-C-2 044 228 thus describes a device for mincing and for heat treatment of meat, into which steam is directly introduced via steam supply openings in the minced product. Document DE-C-1 181 902 also describes a process for the production of canned sausages, in which superheated steam is introduced by spraying, under the eddy of the raw mass intended to be put into sausage.
This state of the art however has significant drawbacks. Thus, the regulations in force regarding food products do not allow the addition of external water, which is formed by condensation. In addition, there is in general no steam specially purified for heat treatment, and therefore the steam used contains a plurality of contaminating components which are inter alia added during boiler treatment and which can be disturbing or even dangerous in food products. Knowing this state of the art, the object of the present invention is to provide the process of the aforementioned type or a corresponding device for implementing said process so as to avoid the aforementioned drawbacks and to provide uniform heating.

The object of the present invention is achieved by a process characterized in that the product is led through an annular space whose inner and outer walls are heated.
According to the invention, the device for implementing the method is characterized in that it comprises an essentially cylindrical inner body which can be heated as well as a tube which is concentric with the inner body and which can be heated by the outer, tube whose inner diameter is larger than the outer diameter of the inner body, the product to be treated can be carried in the annular space between the inner body and the tube, and can be heated through the relatively surfaces large of the interior and exterior faces of the annular space.
According to the invention, the product passes through an annular space whose outer and inner walls are heated. By this indirect heating of the product, or prevents any addition of foreign bodies so that the purity of the product to be treated is ensured. The outer tube is advantageously in the form of a fixed double-walled cylinder, which is provided with a steam inlet opening towards the interior space. Figures 1 and 2 relate to a device as it is for example used in the meat processing industry. As shown in particular in Figure 1, the device is clamped to the housing 2 of the screw of a meat grinder. The drive is carried out by means of the screw 1 of the meat grinder as well as by means of a knife and drive pin 3. The device is fixed to the housing of the screw 2 by means of a nut.
The inner cylindrical body 4 is shown in partial section in FIG. 1. The inner body 4 is provided, on its outer surface, with helical ribs which serve to advance the product to be treated.
The inner body 4 is in the form of a cylindrical tube which is closed on the side facing the housing 2 of the screw of the meat grinder.
