Abstract
Supplement is prepd. as follows: mixture of (M) (inherent buffering capacity is not 0.03) and (U) is heated at >65 degrees, pref. 65 - 85 degrees at pH 4 pref. 1.5 - 3.0 (adjusted with pref. H2SO4 or esp. H3PO4). Reaction is effected under caramelising condns. until the viscosity has increased by is not 20%, and the reaction mixture is flowable. Mixture is then neutralised to pH 4 - 7 to afford the supplement. (I) has not 20% pref. is not 30% conversion of total equiv. protein to equiv. protein not subject to conversion by uriease. Mol. ratio (M) (as total sugar as invert) : (U) initially in >0.75 : 1, pref. 0.75 - 3 : 1, esp. ca 2 : 1.
