Produits slimentaires.

Deux formes de l'invention seront décrites ci-après, à titre d'exemple, avec référence aux dessins schématiques annexés, dans lesquels ;

Une plaque déflectrice rectangulaire 9 est placée au voi- sinage de la sortie du passage 7 et fait un angle de 45 avec le oeil$ général de l'extrusion;

Food products.
The present invention relates to the manufacture of food products from edible materials which are capable of being shaped or molded, for example protein materials, and more particularly relates to the manufacture of such products by a process using a process. A temporary envelope or "skin" for the edible material is stretched as this is subjected to the shaped test pattern.
One such process for making skinless sausages is to introduce a mixture containing finely divided raw meat into a casing, mold the material into the casing and then remove the casing.
The hose, once removed, cannot be reused. Rolling causes a layer to form

<Desc / Clms Page number 3>
Advantageously, the envelope is formed around the edible material to be shaped; and preferably the casing is part of an endless belt of casing material *
For best results, the casing material used should be flexible, reasonably easy to clean, and its surface should be able to easily separate from the shaped edible material. It must also be able to withstand without appreciable change in its physical properties and without too rapid deterioration to the temperature changes to which it is exposed during shaping.
Plastics with these properties. - Nylon, for example - are advantageous. commonly used, although fabrics impregnated with plastics can also be used.
When it is not practical to cut the shaped food product into pieces or when the pieces, such as sausages, are to have shaped ends, cross discs of a suitable material may be placed in the product mixture. food before it is shaped.
The invention applies particularly to the manufacture of food products based on meat or fish.
Two forms of the invention will be described below, by way of example, with reference to the accompanying schematic drawings, in which;
Fig. 1 is a diagram showing an installation for carrying out one form of the invention and the operations carried out using this apparatus. referred to 2 is a perspective view of part of the asphalt shown in Fig. 1;

The installation shown in Fig. 1 includes a snorkel. lure 3 (in the upper left corner of the drawing) ending in a tip 4 through which the edible material to be shaped can be extruded into a temporary envelope 2 formed from part of an endless belt 1 of envoloppe. Near the extrusion tip and on the same axis is a series of three separate straight tubular passages 5, 6 and 7, each bounded by a cylindrical wall which, in turn, is surrounded by a jacket. to circula. tion of water delimited by an outer wall.
The outer wall of each water jacket has inlet and outlet openings allowing water to circulate at the desired temperature * Passages 5 and 6 are each about 4 meters long; passage 7 is about 30 cm long.

A rectangular deflector plate 9 is placed adjacent to the outlet of passage 7 and forms an angle of 45 with the general eye of the extrusion;
