Description

   <Desc/Clms Page number 1>

 <Desc/Clms Page number 2>

   The invention relates to a process for making a "toast"-like product from bread, in main order from old bread, such as daily surplus from a bakery production, although 'we can also start with fresh bread, baked especially for this purpose.

   To make "toast" the bread is cut into slices from which pieces of the size you want to give the finished product are cut, after which these pieces are heated in

 <Desc / Clms Page number 2>

 two-piece shapes from which they emerge as a "toast".

   According to the invention, a slice of bread is taken with a thickness such that the two faces of this slice come into contact with the projections of the interior walls of the form. Said shape, the internal walls of which may have a configuration similar to that of waffle irons, is heated in one or the other way, for example electrically.

  The slice of bread does not stay in shape for long, heating only lasts about 90 seconds. Experience has shown that in this way a product resembling toast II is obtained, which keeps well due to the fact that it contains very little water left due to the high temperature at which it is was subjected during cooking. The configuration of the form leaves traces on both sides of the bread tench, since the internal protrusions of said form appear as toasting marks where the bread will be completely browned, 'while between these places there are no is not heated as strongly and is therefore less cooked. The product obtained in this way is very appetizing and pleasantly crunchy.

   This same product in accordance with the invention can also be obtained in a continuously operating waffle oven in which the waffle irons are combined in the form of a conveyor, and pass through a cooking tunnel which can be heated with gas, for example. It is also possible to assemble the lower halves of the shapes according to the surface of a drum or of an endless belt, while the upper halves of said shapes form part of another belt which works in collaboration with said drum. or with the band mentioned first,

   which offers the advantage that the slices of bread to be made into "toast" can be introduced continuously between the upper and lower parts of the forms and be discharged automatically after having traversed

 ru the entire length of the oven.

    CLAIMS.

   1. - Process for the production of a toast-like product, in which slices of bread cut to the size of the product to be obtained are heated in two-piece baking forms, characterized by the fact that the slice of bread to be baked has a thickness such that its two faces come into contact with the projections provided on the internal walls of the form which face said slice of bread.
