L'invention concerne les moyens de manutention, respectivement l'enfournement et le défournement dans les fours de boulangeries, pâtisse- ries et similaires.
On a déjà préconisé à cet effet différents moyens par lesquels les articles sont défournés individuellement ou en masse.
Le dispositif, objet de l'invention, se rapporte à cette deuxiè- me catégorie.
Dans ce but, on a déjà préconisé de supporter les soles de cuis- son par un dispositif mobile logé à l'intérieur du four pendant la cuisson et susceptible d'être évacué du four en entraînant simultanément toutes les soles qu'il porte.
Ce moyen est extrêmement rapide mais oblige à ouvrir complète- ment le four même pour le déchargement d'une seule sole, ce qui est préjudi- ciable pour le bilan thermique de l'installation.
De plus, le chariot emprunte au four une grande quantité de ca- lorles, pratiquement sans aucune utilité, ce qui constitue également une perte de calories sensible, attendu que le chariot est amené à l'extérieur du four lors du défournement.
Le dispositif de l'invention est essentiellement caractérisé en ce qu'il consiste en un chariot maintenu en permanence à l'extérieur du four ce chariot comportant des bras ou supports susceptibles d'être introduits opportunément dans le four, de supporter et de dégager les soles de manière à procéder au déchargement du four d'une manière complète et rapide moyennant une perte de calories minimum.
Les bras ou supports solidaires du chariot peuvent être amovibles de manière à ne laisser subsister lors d'une opération de défournement que les bras correspondant aux soles à évacuer. Ipso facto, il suffira d'ouvrir les portes relatives à ces seules soles, ce qui assure également une perte calorifique réduite au minimum.
Dans une forme préférée d'exécution, le chariot sera susceptible de comporter un nombre de paires de bras en porte-à-faux égal au nombre de soles susceptibles d'être évacuées simultanément. Ces bras seront solidaires d'un mécanisme capable de leur donner un mouvement vertical en vue de soulever légèrement les soles afin de les dégager de leur support fixe du four en les faisant supporter exclusivement par lesdits bras. Ceux-ci pourront alors être déplacés longitudinalement par le déplacement en sens convenable du chariot dont ils sont solidaires.
Le mouvement vertical desdits bras pourra être produit par tout mécanisme manuel, automatique ou semi-automatique. Ce mouvement vertical pourra être rendu superflu en disposant sur les bras un moyen d'accrochage desdites soles en vue de pouvoir les extraire du four en les faisant glisser sur leur support fixe dans le four tout en les faisant supporter par lesdits bras mobiles.
Dans une autre forme d'exécution, on pourrait également suspendre les soles à des bras moyennant l'équipement de ceux-ci de moyens d'accrochage, respectivement de suspension adéquate.
On pourrait également combiner ces différents moyens attendu que conformément à l'invention, il suffit, de toute manière appropriée,de rendre les soles solidaires des bras portés par le chariot afin de permettre à celui-ci d'entraîner lesdites soles et de provoquer ainsi le défournement rapide.
Par chariot,il faut comprendre tout moyen mobile susceptible de donner aux bras les mouvements nécessaires pour dégager et évacuer les soles, ledit moyen étant maintenu à l'extérieur du four et n'intervenant qu'aux moments des enfournements et défournements. En effet, pour l'enfournement,

le même dispositif sera utilisé les différents mouvements des bras étant alors exécutés dans l'ordre inverse de celui qui est nécessaire pour assurer le défournement.
Par bras, il faut également comprendre toute disposition généralement quelconque capable de solidariser provisoirement les soles au dispositif mobile sans préjudice ni pour lesdites soles ni pour les produits qu'elles portent.
Un exemple d'exécution est, à simple titre documentaire, décrit ci-après avec référence aux dessins annexés dans lesquels : les figures 1, 2, 3 et 4 représentent schématiquement quatre phases caractéristiques d'une opération de défournement; la figure 5 représente un détail du mécanisme du chariot; la figure 6 schématise en coupe transversale une sole et ses supports.
Dans cette exécution, le dispositif, objet de l'invention, est constitué substantiellement par un chariot 1.portant un chevalet 2.servant de support à une vis sans fin verticale 3,. Celle-ci porte un pignon coni- que ., engrenant avec un second pignon conique 1 dont l'axe est pourvu d'un volant de manoeuvre aisément accessible.
Sur ladite vis sans fin sont disposés les curseurs 7. par exemple en nombre égal au nombre de soles ou de compartiments du four. Chaque curseur est dament guidé sur le montant , par des galets 9-10. en sorte de pouvoir se déplacer verticalement sans tourner lorsque la vis sans fin est mise en rotation par la manoeuvre du volant . Chaque curseur 2. est solidaire de bras 11 en porte-à-faux dont la longueur est déterminée par la longueur des soles qu'ils doivent supporter.
Conformément à l'une des caractéristiques principales de l' invention, le procédé de manutention pour l'enfournement et le défournement est substantiellement comme suit :les portes du four sont ouvertes, le chariot 1. est déplacé comme indiqué à la figure 2 de manière à amener les bras dans le four, la partie inférieure du chariot venant, par exemple, se loger dans un creux 12 prévu à cet effet dans la partie frontale inférieure du four. Lesdits bras 11' comme schématisé à la figure 6, viennent se placer sous les bords latéraux de la sole correspondante 13, le chariot restant en permanence à l'extérieur du four.
Dans cette position, le volant est manoeuvré de manière à déplacer légèrement les bras vers le haut, comme indiqué à la figure 3, ce qui dégage les soles 13 de leur support fixe 14 et les fait supporter exclusivement par les bras mobiles 11 du dispositif de manutentiono Ensuite, le chariot Lest ramené vers l'arrié- re comme Indiqué à la figure 4. entraînant dans ce mouvement toutes les soles supportées par les bras. Le défournement est ainsi quasi instantanément terminé.
Lesdits bras 11 généralement montés par paires peuvent être solidarisés à leur curseur 2. d'une manière amovible. Il en résulte que l' on peut ne monter sur le chariot que les bras correspondant aux soles à dégager. Il suffit de ménager, entre les bras et leur support, un moyen d'accrochage, respectivement de fixation, lequel est essentiellement variable et ressortit aux connaissances normales de l'homme de métier.
Il va de soi de le mécanisme et le volant de manoeuvre susdécrits n'ont qu'un caractère indicatif, étant entendu que les bras 11 peuvent être déplacés verticalement par tout autre mécanisme à l'intervention de n'importe quel organe de manoeuvre : levier, manivelle, pédale ou autre.
Le mouvement vertical pourrait également être produit par un dispositif à excentrique animant les bras 11 ou porté par ceux-ci. Par ailleurs, ce mouvement vertical est facultatif et pourrait être rendu superflu par un moyen de solidarisation entre les soles 13 et les bras 11.

The invention relates to handling means, respectively loading and unloading in ovens of bakeries, pastry shops and the like.
Various means have already been recommended for this purpose by which the articles are unloaded individually or en masse.
The device, object of the invention, relates to this second category.
For this purpose, it has already been recommended to support the cooking plates by a mobile device housed inside the oven during cooking and capable of being removed from the oven by simultaneously driving all the plates which it carries.
This method is extremely fast but requires the furnace to be opened completely even for unloading a single hearth, which is prejudicial for the thermal balance of the installation.
In addition, the cart borrows a large quantity of calorls from the oven, practically without any use, which also constitutes a significant loss of calories, since the cart is brought outside the oven during the discharge.
The device of the invention is essentially characterized in that it consists of a carriage permanently kept outside the oven, this carriage comprising arms or supports capable of being introduced opportunely into the oven, of supporting and releasing the soles so as to unload the oven completely and quickly with minimum loss of calories.
The arms or supports integral with the carriage may be removable so as to leave only the arms corresponding to the soles to be removed during a removal operation. Ipso facto, it will suffice to open the doors relating to these sole plates, which also ensures a heat loss reduced to a minimum.
In a preferred embodiment, the carriage will be capable of comprising a number of pairs of cantilevered arms equal to the number of soles capable of being evacuated simultaneously. These arms will be integral with a mechanism capable of giving them a vertical movement with a view to slightly lifting the soles in order to release them from their fixed support of the oven by making them supported exclusively by said arms. These can then be moved longitudinally by moving the carriage in the appropriate direction to which they are integral.
The vertical movement of said arms can be produced by any manual, automatic or semi-automatic mechanism. This vertical movement can be made superfluous by placing on the arms a means for attaching said soles in order to be able to extract them from the oven by sliding them on their fixed support in the oven while making them supported by said movable arms.
In another embodiment, the sole could also be suspended from the arms by equipping them with hooking means, respectively with adequate suspension.
These different means could also be combined, given that in accordance with the invention, it suffices, in any appropriate manner, to make the soles integral with the arms carried by the carriage in order to allow the latter to drive said soles and thus cause rapid discharge.
The term “trolley” should be understood to mean any mobile means capable of giving the arms the necessary movements to release and remove the soles, said means being kept outside the oven and only intervening at the times of charging and discharging. Indeed, for the charging,

the same device will be used, the different movements of the arms then being executed in the reverse order to that which is necessary to ensure the discharge.
The term “arm” should also be understood to mean any generally arbitrary arrangement capable of temporarily securing the soles to the mobile device without prejudice either to said soles or to the products which they carry.
An exemplary embodiment is, purely for documentary purposes, described below with reference to the appended drawings in which: FIGS. 1, 2, 3 and 4 schematically represent four characteristic phases of an unloading operation; FIG. 5 shows a detail of the mechanism of the carriage; FIG. 6 is a diagrammatic cross section of a sole and its supports.
