PROCEDE POUR LE TRAITEMENT THERMIQUE DE SUBSTANCES FLUIDES ET EN PARTICULIER DE CHOCOLAT ET APPAREIL POUR SON APPLICATION.
La présente invention est relative aux procèdes et appareils pour le traitement thermique de substances fluides ou fluidifiables et notam- ment, de checolat fondu dans l'industrie de la confiserie, et elle se rapporte plus particulièrement à la partie du traitement préparatoire qui constitue le "conditionnement" thermique effectué avant la coulée de moulage ou d'enro- bage.
Ainsi qu'il est connu on prépare le masse de chocolat à une température supérieure à celle de coulée. Le refroidissement de la masse préparée à sa température de coulée s'effectue dans des dispositifs connus de capacité relativement faible et qui doivent être remplis fréquemment, c'est-a-dire par une opération qui n'est pas continue.
De ce fait, la masse de chocolat doit être conservée dans des récipients spécialement chauffés, d'ou'résultent une augmentation de la main-. découvre nécessaire et un supplément de chaleur à fournir pour empêcher la solidification.
Immédiatement avant de couler et de mouler la masse de chocolat, on doit la porter à une température déterminée, tandis qu'en même temps les germes de solidifacation-(oristaux de beurre de cacao) doivent avoir le temps de se former, car la fonction de ces germes consiste à accélérer l'opération éventuelle de solidification. On voit donc que la qualité du produit et la possibilité d'effectuer un traitement rapide et continu dépendant com- plètement dé l'état dans lequel la masse de chocolat est amenée avant les opérations de coulée ou de moulage.
L'invention a pour objet un procédé et un appareil pour le traitement en continu, d'une masse fluide, en particulier de chocolat fondu, par lequel on amène la substance à traiter dans l'état physique approprié avant las

opérations de coulée et de moulage,-et qui permet aon aeulement d'accélérer la production et déconomiser la main-d'oeuvre, mais encore de diminuer l'encombrement.
Le dessin annexé donné uniquement à titre d'exemple représente en coupe verticale schématique un mode de réalisation d'un appareil suivant l'invention.
Selon 1-'exemple d'exécution représenté, la masse 1 de chocolat ou autre substance à traiter-arrive directement dans un récipient 2 (d'une capacité d'environ une tonne) et on l'y maintient à l'état fondu au moyen d'une double circulation d'eau dans la double paroi 3 du récipient.
Un bras agitateur 4 rotatif qu'un arbre 5 fait tourner d'un mouvement continu, maintient la masse fondue en mouvement. Le récipient 2 comporte en son point le plus bas, une tubulure de sortie 6 qui communique avec l'orifice d'entrée ou d'aspiration d'une pompe 7.
Cette pompe comporte un rotor annulaire 8 de section en U qui en coopérant avec la paroi 9 d'un stator 10 disposé à l'extrémité de la tubulure de sortie 6 délimite une chambre annulaire de pompage. Celle-ci comporte à son extrémité supérieure un orifice de sortie non représenté, qui communique avec une chambre cylindrique verticale 11 formant échangeur thermique, de faible largeur, superposée à la pompe 7. Une ailette menée 12 disposée radialement à travers la chambre annulaire de la pompe 7 partage cette chambre en une portion de refoulement et une portion d'aspiration et coopère avec une ailette ou vanne fixe 13, faisant saillir radialement dans la chambre annulaire de la pompe, mais adaptée pour pouvoir être déplacée vers l'extérieur en vue de permettre à l'ailettes menée 12 de la franchir au cours de la rotation du rotor 8, de section en U.
Lorsque ce rotor 8 tourne, la masse de chocolat est aspirée d'une manière continue dans la tubulure de sortie 6 du récipient, par lorifice d'aspiration, puis comprimée entre les ailettes 12 et 13 pour être finalement refoulée à travers l'orifice de sortie de la pompe de bas en haut dans la chambre 11 de Il'échangeur thermique.
Pour régler le débit de refoulement de la pompe 7 sans faire varier sa vitesse de rotation, il est prévu un dispositif pour régler la profondeur de pénétration de Paillette 13 dans la chambre annulaire de la pompe;par suite, lorsque cette ailette 13 bloque complètement la chambre de la pompe le déplacement volumétrique de la. pompe est maximum tandis que lorsque 1ailette 13 est partiellement ramenée en arrière hors de la chambre annulaire, comme le montre la figure, elle ne constitue qu'un obstacle partiel et une certaine proportion de la masse peut s'échapper de la portion de refoulement de la chambre de la pompe ce qui diminue d'autant le débit de refoulement.
La chambre 11 de l'échangeur thermique contient un cylindre râcleur concentrique 14 qui comporte une série d'ailettes inclinées 15 dont la fonction consiste non seulement à racler les parois de la chambre 11, mais encore par leur inclinaison a faire prendre au chocolat ou autre substance dans ladite chambre 11 d'échange thermique un mouvement continu.de bas en haut.
Cette 'chambre 11 est entourée d'une double paroi fôrmant chemise d'eau, partagée en deux sections 16 et 17, indépendantes l'une de l'autre, Ces sections 16 et 17 sont alimentées en eau froide, ainsi qu'on le verra plus loin, de façon à refroidir la masse de chocolat passant dans l'intervalle étroit de la chambre annulaire d'échange 11 de faon à provoquer la formation des noyaux ou germes de solidification comme cela est nécessaire dans la préparation de la masse de chocolat avant sa coulée. Le cylindre râcleur 14 est monté sur un arbre 18 commun au rotor annulaire 8 de la pompe, de façon à faire correspondre le refoulement de la pompe 7 au débit de la masse de chocolat passant de bas en haut dans la chambre 11.
L'extrémité supérieure du cylindre râcleur 14 se prolonge au-delà. de la partie supérieure de la section 17 de la chemise d'eau et s'étend jusqu'au sommet d'une chambre 19 de tête également entourée par une double paroi formant chemise d'eau 19a alimentée en eau chaude, ainsi qu'on le verra plus loin pour faire subir à la masse un. conditionnement complémentaire. La chambre 19 communique avec un conduit de refoulement 20 qui comporte aussi une dou-

ble enveloppe indépendante 21 qui est alimentée en eau chaude, et qui commu- nique avec l'orifice de sortie 22 de la machine. Cet orifice de sortie 22 a la forme d'un ajutage 23 entouré par une double enveloppe 24 communiquant avec la double enveloppe d'eau 21 du conduit de refoulement 20.
Un tamis'25 est disposé dans l'orifice de l'ajutage 23 et pour faciliter la sortie continue de la masse de chocolat un vibrateur ou pulsateur

L'eau chaude sortant de la double paroi 32 de la pompe passe par un tuyau 33 dans la double paroi 21, puis dans la double paroi 24 de l'ajutage 23*et revient dans la double paroi,32 de la pompe par un tuyau 34 en passant dans. une chambre 35 qui contient un second élément de chauffage immergé 36 réglé par un élément themostatique 37 également logé dans la chambre 35.
Les deux sections 16 et 17 de la chemise d'eau entourant la chambre d'échange thermique 11 sont alimentées en eau froide par un tuyau commun 38 qui se divise en deux branches 39 et 40 dont les débits peuvent être réglés indépendamment par des robinets 41 et 42, de telle sorte que l'action de refroidissement sur les parois de la chambre 11 peut être exercée soit par les'deux sections 16 et 17, soit, s'il y a lieu, par l'une d'elles seulement.

1. - A method of treating a fluid substance such as melted chocolate, said method being characterized in that the substance which comes out of a main receptacle in which it is kept in the molten state is passed continuously, through an annular chamber of elongated shape of a heat exchanger in which it undergoes one or more cooling treatments regulated independently of each other and followed in a last stage, by a final treatment during which a new adjustable amount of heat can be transmitted to the mass before its final exit.
