MACHINE POUR HACHER FINEMENT LES VIANDES ET EN FORMER DES PATES.
La présente demande de perfectionnement est relative à des machines pour hâcher, cuttrer des viandes en vue de les présenter sous forme de pâtes., et basée sur la conception qui fait l'objet de la demande de brevet principal n 4010437 du 1 août 1952.
Dans le brevet principal il est décrit une machine pour le cuttrage des viandes comportant un porte-couteaux pourvu d'un accouplement pour son raccordement direct sur un arbre moteur débouchant au fond d'une cuve, de telle façon que le porte-couteaux peut être monté sur ledit arbre et enlevé de la cuve facilement.
Dans un premier perfectionnement, la machine à hâcher les viandes comprend une cuve dans laquelle débouche l'extrémité d'un arbre moteur trouvant dans le fond de la dite cuve un palier étanche, des moyens étant prévus pour fixer à l'extrémité de l'arbre au moins un étage de couteaux ainsi que pour éviter des projections hors de la cuve.
Sur le support-couteaux sont montées des lames dirigées approximativement parallèlement à l'axe de la cuve et destinées à éviter la formation de bulles d'air au sein de la pâte traitéeo
Dans un second perfectionnement, il est prévu une cuve dans laquelle débouche l'extrémité d'un arbre de commande en relation avec le moteur et sur lequel est simplement glissé un porte-couteaux comportant à la fois des couteaux, un racleur et des lames verticales, des moyens étant prévus d'abord pour assurer l'entraînement du porte-couteaux ainsi que pour éviter le dégagement du porte-couteaux pendant le fonctionnement, ensuite pour une introduction graduelle des ingrédients dans la cuveo
La pratique a montré qu'il était nécessaire pour un bon fonctionnement de la machine d'obtenir un circuit de la viande sous l'action des couteaux qui,
s'élevant contre les parois de la cuve, redescend vers le centre pour être à nouveau traitée par les dits couteaux.

Lors du traitement de grandes quantités de viande, Inexpérience montre qu'il se forme au-dessus de la matière traitée, une couche qui reste pratiquement stable.

Suivant l'invention, il a été observé qu'on peut parfaitement évacuer 19 air se trouvant dans la masse en faisant tourner en son sein une réglette creuse pour le sens opposé au mouvement.
En fixant la règlette sur le porte-couteaux, le déplacement de la réglette sera suffisamment rapide, même en cas de pâte plus ou moins li- quide, pour éviter que la pâte referme complètement le sillon que trace la règletteo

Suivant le mode de réalisation représenté aux figs. 1 et 2, sur un support 1 est fixé une réglette 2, présentant une section en forme de V.
L'arête 3 de la réglette est placée dans le sens de la rotation, de sorte que la résistance au déplacement est réduite au minimum.
Le support 1 est rendu solidaire du porte-couteaux de la machine par tous moyens connus, de sorte que lors du fonctionnement, la réglette trace un sillon dans la matière traitée en écartant graduellement par les ailes 4-5, disposées obliquement l'une par rapport à l'autre, la matière, de façon qu'il reste toujours entre les dites ailes un conduit pour l'évacuation de l'airo

Les figso 4 et 5 montrent une variante de réalisation de la séparation entre les circuits montant et descendant qui se créent dans les matières traitées et suivant laquelle réalisation il est agencé dans la cuve, audessus des couteaux, une paroi 6 ayant la forme d'un tronc de cône renversé.
Cette paroi 6 est fixée à l'aide de bras 7 sur un anneau 8 prenant sur un rebord ou toute autre aspérité prévue sur la paroi interne de la cuve, de sorte à maintenir la paroi 6 suspendue au-dessus des couteaux.

The present improvement application relates to machines for chopping and slicing meats with a view to presenting them in the form of pasta., And based on the design which is the subject of main patent application No. 4010437 of August 1, 1952.
In the main patent there is described a machine for cutting meat comprising a knife holder provided with a coupling for its direct connection to a motor shaft opening out at the bottom of a vat, so that the knife holder can be mounted on said shaft and removed from the tank easily.
