COMMANDE POUR MACHINE A HACHER LA VIANDEo La présente invention se rapporte aux machines à hacher la viande.
Comme on le sait, dans ces machines l'opération de hachage s'ef- fectue à l'intervention d'une plaque perforée et d'un ou de. plusieurs cou- teaux montés sur un porte-couteaux et ces deux éléments doivent être rappro- chés au moment de l'utilisation afin de produire le serrage du couteau con- tre la plaque.
Actuellement ce serrage est obtenu par une intervention manuelle du boucher qui utilise à cet effet un croisillon ce qui donne lieu à l'incon- vénient que ce serrage est souvent trop fort et que de ce fait le couteau et la plaque s'échauffento
Par contre, si ce serrage est-insuffisant, un autre inconvénient se présente en ce sens que les nerfs qui se trouvent dans la viande viennent se placer entre la plaque perforée et le couteau ce qui empêche la sortie normale de la viande.
La présente invention a pour but d'obtenir un degré de serrage qui soit toujours le même et qui soit déterminé indépendamment d'une inter- vention manuelle de l'opérateur.

Une autre caractéristique est que les organes produisant le coulissement de l'arbre sont actionnés par une manette située et accessi- ble à l'extérieur de la gaine.
Afin de bien faire comprendre l'invention on décrira ci-après à titre d'exemple non limitatif une commande réalisée conformément aux don- nées de l'invention.
La figure 1 est une vue en élévation représentant la gaine constituant le prolongement de l'enveloppe de la machine.
La figure 2 est une vue en coupe représentant le mécanisme de commande.
Sur les dessins ci-joints, 1 désigne l'enveloppe du hâche-vian- de dans laquelle s'étend l'escargot 2 sur lequel est fixé à son extrémité un couteau (non représenté) portant des lamés et coopérant avec une plaque perforée fixe (non représenté).
Conformément à l'invention, sur l'enveloppe 1 est fixée une gaine 3 dans laquelle s'étend l'arbre 4 qui prolonge l'escargot 2 et qui est commandé par un moteur électrique ou autre (non représenté) et'qui tourne dans des roulements à billes ou à rouleaux 5, 6 et 7 et la mise en contact du couteau et de la plaque perforée s'effectue en faisant coulisser l'arbre 4 dans le sens indiqué par la flèche F.
Ce mouvement de coulissement est obtenu dans l'exemple repré- senté par une manette 8 qui est calée sur une partie carrée 9 d'un arbre 10 traversant la gaine 3 dans une direction à 90 par rapport à l'arbre 4 et portant de part et d'autre de la gaine 3 une came 11 agissant sur des ga- lets 12 fixés sur des axes 13 pouvant se déplacer dans des fentes 14 formées dans la gaine 3.
Les axes 13 portent des tenons filetés 141 pénétrant'dans une pièce 15 concentrique à l'axe 4 et se repliant en 16 vers l'arbre 4 de ma- nière à pouvoir agir sur l'enveloppe du roulement 6.
A l'endroit du roulement 6 l'arbre porte une pièce 61 qui forme une butée 6 2pour un ressort 17 lequel s'étend entre ce roulement et une pièce 18 solidaire de l'arbre 4 et munie d'une saillie périphérique 19 for- mant butée pour le ressort 17.
La pièce 18 est en contact avec le roulement 5.
Dans ces conditions, si au moyen de la manette 8 on fait tourner l'arbre 10, celui-ci par les cames 11 et les galets 12 provoque le coulisse- ment des axes 13 dans les fentes 14; ces axes 13 entraînent avec eux la pièce 15 qui en agissant sur le roulement 6 et la pièce 6 provoque le coulisse- ment de l'arbre 4. A ce coulissement participent la.

Comme on le comprend grâce à la disposition décrite la mise en contact du couteau et de la plaque s'effectue avec une serrage bien détermi- né et réglé une fois pour toutes par le-ressort 17 et l'on évite ainsi tout échauffement du couteau et de la plaque pouvant provenir d'un serrage trop

intense.
D'autre part l'on remédie à l'inconvénient pouvant provenir d'un serrage insuffisant donnant lieu à la. formation de nerfs dans la viande.
REVENDICATIONS. la Dispositif de commande pour hâche-viande caractérisé en ce que la mise en contact de la plaque perforée et du couteau coopérant avec celle-ci est produite par des moyens déterminant un coulissement de l'arbre de commande de 1-'escargot.

As is known, in these machines the chopping operation is carried out with the intervention of a perforated plate and an or. several knives mounted on a knife holder and these two elements must be brought together at the time of use in order to produce the clamping of the knife against the plate.
Currently this tightening is obtained by a manual intervention of the butcher who uses for this purpose a cross which gives rise to the inconvenience that this tightening is often too strong and that therefore the knife and the plate heat up.
