La présente invention est relative aux lames des machines à couteaux rotatifs telles que les machines à couper ou hacher la viande et elle a pour but d'améliorer, par une modification appropriée du,profil des lames, le rendement de ces machines en diminuant l'effort de coupe et les pertes par échauffement.
Les couteaux rotatifs des machines à viande ont généralement un angle de coupe de l'ordre de 70 à 80 et l'on constate souvent qu'ils travaillent non seulement par sectionnement, mais aussi par arrachage et déchirement des fibres, ce qui est préjudi- ciable au rendement de la machine et donne lieu à des pertes par frottement et échauffement. Il est désirable de diminuer l'angle de coupe afin de faciliter le travail de sectionnement, mais les' matériaux utilis,és habituellement pour la fabrication de ces lames ne permettent pas de concilier la réduction de cet angle avec la résistance à l'usage et notamment aux chocs fréquents dûs à la présence accidentelle, mais inévitable, d'os dans les matières à découper.
Il résulte des recherches de la demanderesse que l'angle de coupe optimum pour le sectionnement des fibres de la viande est de 26 , un tel angle assurant la découpe régulière des fibres et réunissant les meilleures conditions pour l'attaque des os. La présente invention donne le moyen de réaliser des couteaux ayant cet angle de coupe par l'utilisation d'un acier spécial présentant les qualités de résistance voulues.
@ La lame suivant l'invention est donc caractérisée par un angle de coupe de 26 une tolérance allant jusque 5 en plus étant cependant admissible. Elle est constituée d'un acier spécial à haute teneur en nickel, et contenant aussi du chrome et du molybdène..De préférence le couteau rotatif composé des lames en question est rapporté les lames étant fixées a une pièce de support et coudées longitudinalement de façon à présenter leur tranchant à l'orifice de débit de la viande.
Le dessin annexé représente à titre d'exemple un couteau rotatif à lames suivant l'invention, Fig. 1 étant une vue du couteau en élévation, Fig. 2 une coupe suivant la ligne II-II et Fig. 3 une vue en plan.

L'acier utilisé pour la fabrication des lames, est à haute teneur en nickel, sa composition étant par exemple la suivante :

Il est bien entendu que des modifications peuvent être apportées à la forme des lames et à leur disposition ainsi qu'à leur fabrication sans sortir du cadre de l'invention.

The present invention relates to the blades of machines with rotary knives such as machines for cutting or mincing meat and its aim is to improve, by an appropriate modification of the profile of the blades, the efficiency of these machines by reducing the cutting force and losses by heating.
The rotary knives of meat machines generally have a cutting angle of the order of 70 to 80 and it is often found that they work not only by cutting, but also by tearing and tearing the fibers, which is prejudicial. cable to the efficiency of the machine and gives rise to losses by friction and heating. It is desirable to decrease the cutting angle in order to facilitate the cutting work, but the materials usually used for the manufacture of these blades do not allow the reduction of this angle to be reconciled with the resistance to use and in particular to frequent shocks due to the accidental, but inevitable presence of bone in the materials to be cut.
It results from the applicant's research that the optimum cutting angle for cutting the fibers of the meat is 26, such an angle ensuring the regular cutting of the fibers and bringing together the best conditions for attacking the bones. The present invention provides the means of producing knives having this cutting angle by using a special steel having the desired strength qualities.
@ The blade according to the invention is therefore characterized by a cutting angle of 26, a tolerance of up to 5 in addition being however admissible. It is made of a special steel with a high nickel content, and also containing chromium and molybdenum. Preferably the rotary knife composed of the blades in question is added the blades being fixed to a support part and bent lengthwise in a way. to present their cutting edge to the meat flow opening.
