Soutien-viande réglable pour machines à découper
La présente invention a pour objet un dispositif pour sou- tenir la viande dans les machines à découper, lequel disposi- tif comporte une plaque destinée à soutenir latéralement la viande et maintenue de façon réglable au chariot de la machine
Cette plaque peut être portée par une tige coulissant dans la tête d'un bras-support tenu au chariot et pouvant y .être fixée à l'aide d'une vis de serrage.
Dans les machines actuellement connues, il se produit que la pièce de fixation ordinaire exerça une pression de haut en bas sur la viande, jambon, saucisson. filet, et analogues.
Sous cet écrasement, la viande s'élargit, devient lâche, c'est- à-dire moins consistante, et malgré la pression exercée, l'ex- trémité de la pièce à découper n'est pas suffisamment souctenie et provoque généralement certains déchets et des tranches irré- gulières.
La présente invention a principalement pour but d'obvier à cet inconvénient.

A l'extrémité de la tige o est fixée une pleque destinée à soutenir la viande. Cette plaque peut être légèrement bom- bée afin d'épouser ainsi la forme du jambon, ou du saucisson à découper. Cette plaque e ayant de préférence une forme lé- gèrement courbée vers l'extérieur (voir fig.3) ne présente aucune résistance pour l'avancement de la viande et soutient seulement la pièce à découper sans provoquer la moindre ré- sistance dans l'avancement normal du plateau sur le chariot.
Le présent dispositif peut aussi s'appliquer à toute au- tre machine à découpage automatique.
Par la simple pression de la plaque oontre la viande à découper, cette dernière est soutenue de bas en haut et vice- versa, oe qui n'est pas obtenu par la pince de fixation ordi- naire f.
La pince de fixation ordinaire f exerce sur la viande une pression de haut en bas et il se produit un écrasement de ,la viande qui se projette latéralement au détriment de la con- sistance de la matière; la plaque empêche cette projection latérale.
La glissière de fixation pratiquée dans le support a per- met le démontage rapide de l'appareil dans l'emploi d'un outil et se replace et se règle contre la viande aussi rapidement et

d'une façon absolument rigide.
L'invention a été décrite et illustrée à titre parement indicatif et nullement limitatif et il va de soi que de nombreu- ses modifications peuvent être apportées à ses détails sans s'écarter de son espirt.

Adjustable meat holder for carving machines
The present invention relates to a device for supporting meat in cutting machines, which device comprises a plate intended to support the meat laterally and held in an adjustable manner to the carriage of the machine.

In currently known machines, it happens that the ordinary fastener exerted a pressure from top to bottom on the meat, ham, sausage. net, and the like.
