Abstract
Deze uitvinding betreft een industrieel toepasbare werkwijze voor het produceren van een vegan chocolade mousse, waarbij de werkwijze de volgende stappen omvat: - het maken van een eerste mengsel in de vorm van een plantaardige vetbereiding omvattende water of een plantaardige melk, een vetstof, een emulgator en een indikkingsmiddel; - het maken van een tweede mengsel in de vorm van een plantaardige meringue omvattende een plantaardig eiwit, suiker en/of vezels en/of suikeralcoholen; - het maken van een derde mengsel omvattende een chocolade component; en vervolgens - het mengen en beluchten van de drie genoemde mengsels voor het bekomen van de vegan chocolade mousse.This invention relates to an industrially applicable method for producing a vegan chocolate mousse, the method comprising the following steps: - making a first mixture in the form of a vegetable fat preparation comprising water or a vegetable milk, a fat, an emulsifier and a thickening agent; - making a second mixture in the form of a vegetable meringue comprising a vegetable protein, sugar and/or fiber and/or sugar alcohols; - making a third mixture comprising a chocolate component; and then - mixing and aerating the three mentioned mixtures to obtain the vegan chocolate mousse.
