Procédé et dispositif de cLarification de La maische.
La présente invention concerne un procédé, connu par La publication interne DE 25 32 511 82, pour La cLarification de La maische au moyen d'un filtre comportant plusieurs chambres de maische séparées Les unes des autres, montées en parallèle par L'intermédiaire d'une conduite d'alimentation commune en maische, respectivement Limitées par deux surfaces filtrantes (tissus) et flanquées bilatéralement de deux cavités, qui reçoivent, par ordre dans Le temps, L'air refoulé de la chambre de maische intermédiaire, puis Le premier moût, puis L'eau de brassage et/ou Le moût second, ou inversement, procédé dans lequel la maische est poussée en discontinu par la conduite d'alimentation dans les chambres de maische, L'air contenu dans ces dernières étant alors refoulé, et Le premier moût étant ensuite chassé de la maische dans Les cavités, procédé dans lequel,
à La fin de l'aliméntation en maische, L'eau de brassage n'est injectée que dans L'une des deux cavités pendant un temps donné, Le moût second étant extrait de L'autre de ces deux cavités, et procédé dans lequel de L'air comprimé (quelques bars) est enfin utilisé, Le cas échéant, pour chasser Le moût résiduel de la maische et des cavités.
Dans Le procédé connu, de L'eau de Lavage est injectée dans L'une des deux chambres de moût, formant une paire et séparées par une chambre de maische, et Le moût second est

évacué de l'autre de ces deux chambres de moût, pour L'extraction, déjà connue (adoucissement, arrosage, Lavage) des drêches (maische exempte de moût), restant dans Les chambres de maische après La filtration, L'extraction étant assurée d'une manière caractéristique sur deux brassins successifs (charges) dans un sens d'écoulement alternatif, chacune des deux chambres de moût, séparées par une chambre de maische, étant utilisée alternativement pour l'arrivée de L'eau de Lavage et pour L'évacuation du moût second.
Un tel procédé élimine le problème représenté par une couche de barrage, reconnue comme couche visqueuse contenant des protéines (pâte), qui obstrue gradueLLement Les pores des tissus fiLtrants, utilisés comme surfaces filtrantes, si ces tissus ne sont pas nettoyés fondamentalement, et avec une fréquence suffisante, au moyen d'une Lessive dans Le filtre à maische.
L'obstruction des pores a différents inconvénients, évités par Le procédé connu.
IL a été établi, dans l'intervalle, que La couche de barrage mentionnée peut apparaître entre deux opérations de nettoyage sur La surface filtrante, même avec un nettoyage réguLier des tissus filtrants, dans l'exploitation de filtrespresses à chambres pour La filtration de La maische, Lorsque des matières premières de qualité inférieure ont été utilisées pour La production de La maische, ou Lorsque ces matières premières n'ont pas été préparées dans les règles de l'art, si bien que Le Lit filtrant est déjà obstrué avant la formation du gâteau de drêche. La conséquence est une montée en pression rapide jusqu'au seuil de pression du filtre, ou jusqu'à La hauteur de refoulement maximale de la pompe de filtration ou de la pompe d'alimentation en eau de brassage, utilisée pour Le lavage.
Mais si L'un de ces points est atteint, il convient d'interrompre L'opération de filtration ou Le Lavage du gâteau de filtre-presse. Le moût contenu dans Le gâteau et/ou L'extrait résiduel est donc perdu pour Le processus de brassage. Par sa forte teneur résiduelle en eau, Le gâteau de filtre, débarrassé de La drêche, élève par

ailleurs la charge en eaux usées de la brasserie.
L'invention vise donc à créer un procédé de clarification de La maische au moyen d'un filtre, qui évite Les inconvénients précités et dont La réalisation s'oppose à La formation d'une couche de barrage sur Les surfaces filtrantes, dès La clarification d'une charge de maische.
A partir d'un procédé du type décrit en introduction, cet objectif est atteint, conformément à L'invention, par Le fait que, pendant La production de moût second à partir d'une seule et même charge de maische, de L'eau de brassage est injectée dans l'autre des deux cavités, pendant une période donnée, différente de celle citée, et du moût second est extrait d'une cavité, séparée de La chambre de maische intermédiaire par une surface filtrante (tissu).
Par suite de L'inversion du sens d'écoulement au travers de chaque chambre de maische, après une première phase de production de moût second pour une deuxième phase de La même production, une couche de barrage, formée sur La délimitation d'une chambre de maische quelconque, y est dissoute, sans pouvoir se reformer sur l'autre bord de La même chambre, et ce, même Lorsque La deuxième phase est aussi longue que La première, car les molécules de protéines, formant la couche de barrage, devraient pénétrer dans la deuxième phase au travers de la quasi-totalité de la charge de maische, tandis que ces molécules, dans la première phase, migrent de différentes couches de la charge sur L'un de ses bords, comme Le font également les solides (glumes) de la charge de maische pendant la formation du gâteau de drêche consécutif.
Le filtre à maische suivant la publication DE 25 32 511 B2, utilisé pour la réalisation du procédé connu, ne permet pas d'exécuter Le procédé conforme à l'invention, car les deux cavités, flanquant chaque chambre de maische, y sont réaisées sous forme de chambres de moût volumineuses, d'une capacité unitaire de plus de 20 Litres, si bien que L'injec-

tion d'eau de brassage pour La production de moût second, dans une chambre de moût comportant déjà du filtrat, provoquerait la dilution de cette quantité de filtrat relativement élevée.
Si la maische est soumise à un pressage préalable indirect, entre L'extraction du premier moût, ladite filtration de La maische, et du moût second des deux cavités (chambres de moût), flanquant chaque chambre de maische, par de L'air sous pression relativement faible, de quelques dixièmes de bars, Le moût premier résiduel étant alors refoulé des deux cavités, une dilution du moût, présent dans ces cavités, est évitée par L'eau de brassage utiLisée pour Les moûts seconds. Dans Le procédé connu en revanche, Le premier moût formé dans Les chambres de moût, entre La filtration de La maische et Le Lavage, est refoulé par L'eau de brassage, et sa dilution est considérable.
Si La maische est soumise à un pressage final indirect après Le Lavage, par de L'air sous une pression relativement élevée de quelques bars, Le moût second résiduel étant aLors refoulé des deux cavités adjacentes, il est possible d'évacuer ce moût second par un conduit, qui s'étend sur Les deux cavités flanquant chaque chambre de maische. Dans Le procédé connu, en revanche, de L'air n'est injecté que dans chaque deuxième chambre de moût et pénètre au travers des deux chambres de maische adjacentes et dans Les chambres de moût suivantes, après que Le moût second ait été refoulé.
Dans La réalisation du procédé conforme à l'invention, il est également possible, comme connu en soi, d'alimenter et de faire traverser Les chambres de maische par une lessive, sur Le parcours de La maische, après La clarification et l'extraction consécutive de La drêche, en vue de nettoyer les surfaces filtrantes (tissus filtrants). IL est par ailleurs prévu d'injecter simultanément de l'air comprimé dans Les chamores ae maische, sur le parcours de cette

dernière, et d'animer ainsi La Lessive d'un mouvement de turbulence, qui élève considérablement L'effet de nettoyage de La Lessive.
Si L'eau de brassage pour La production de moût second est recyclée, après La dernière inversion du sens d'écoulement au travers des chambres de maische, de préférence, La concentration de moût s'élevant de ce fait d'une manière dégressive, un gain d'énergie primaire est obtenu comme pour chaque élévation de concentration dans La cuisson ultérieure du moût.
IL est possible d'utiliser comme filtre à maische, dans Le procédé conforme à L'invention, un filtre-presse à diaphragme, caractérisé par un paquet de plaques, serrées les unes contre les autres et étanches à L'eau, composé de plaques à chambres renfLées et de plaques à diaphragmes, avec une plaque-support centrale et deux diaphragmes latéraux renflés, serrés sur leurs bords, qui pressent L'une des deux surfaces filtrantes (tissus), limitant une chambre de maische, coincées sur leur bord entre deux plaques adjacentes, lorsque la chambre de maische est remplie et que L'autre des deux surfaces filtrantes s'appuie alors sur la plaque à chambre renflée voisine, L'ordre des éléments, dans Le sens des plaques du paquet muni de six conduits parallèLes, étant Le suivant sur chaque plaque à chambre :

Par Les quatre conduits, qui ne servent pas à son chargement en maische et/ou à l'arrivée ou à L'évacuation d'air comprimé, un tel filtre à maische offre La possibilité d'alimenter ses cavités, d'une manière sélective, en air comprimé, premier moût, eau de brassage et moût second, et d'en évacuer Les substances précitées.
L'invention concerne également un dispositif pour la réaLi- sation du procédé, avec une conduite de moût menant du filtre à maische à une cuve de moût ou à un réservoir primaire, dans laquelle règne une contre-pression minime (quelques dixièmes de bars), caractérisé en ce que la première section de cette conduite de moût constitue une ligne de maintien de pression, à L'extrémité de laquelle une soupape d'étranglement fait suite à un capteur de pression, la soupape limitant avec Le capteur un système asservi.
La ligne caractéristique de maintien de pression s'oppose à une pression d'aspiration par Le filtrat, qui s'écoule lors du pressage préaLabLe et dans la première phase de production de moût secona, sur Le gâteau de drêche, c'est-à-dire à une compression inopportune de ce dernier avant et après cette crémière pnase.

L'installation de filtration se compose principalement du filtre à maische horizontal et du silo à drêche sous-jacent, dans lequel tombe Le gâteau de drêche des chambres de maische, Lorsque Le filtre est ouvert et que ses plaques sont séparées Les unes des autres.
Le filtre à maische présente une plaque d'extrémité mobile 10 et une plaque d'extrémité stationnaire 10', par LesqueLLes est serré un paquet de plaques, qui commence par une plaque à chambre 12 sur La plaque d'extrémité 10', et qui s'achève par deux plaques à diaphragmes différentes 14 et 14'sur La pLaque d'extrémité 10. Toutes Les plaques à diaphragmes 14 sont munies d'un orifice d'aération 16, raccordé à un conduit d'air 18, au travers duquel peut passer de L'air comprimé pour L'aération des plaques à diaphragmes 14, et de L'air d'évacuation pour La désaération de ces mêmes plaques.
Un conduit de maische continu 20, en partie basse, est réalisé par sections sur Les deux plaques d'extrémité 10, ainsi que sur Les plaques à chambres 12 et Les plaques à diaphragmes 14, formant Le paquet de plaques intermédiaire.
Avec une conduite 22, reliant ses deux extrémités, Le conduit de maische 20 forme un anneau, dans lequel débouche une conduite d'alimentation 24 en provenance de La cuve-matière.
Dans leurs quatre coins, Les plaques rectangulaires 12 et 14 présentent respectivement une section de L'un des quatre conduits de fluide, référencés par un premier conduit 26, un deuxième conduit 28, un troisième conduit 30 et un quatrième conduit 32, dont La plaque d'extrémité 10'forme une section finale, raccordée comme suit : Les sections finales des deux conduits supérieurs 28 (deuxième) et/ou 32 (quatrième) sont raccordées individuellement à une conduite d'évacuation 34 en direction de La cuve de moût ou de son réservoir primaire. Les sections finales des deux conduits inférieurs 26 (premier) et/ou 30 (troisième) sont raccordées séparément à une conduite d'alimentation 36 en eau de brassage.

Deux surfaces filtrantes, à savoir des tissus de matière plastique 50 et 52, dont les bords, étanches l'un par rapport à L'autre, sont coincés entre Les bords des plaques, se situent entre chaque plaque 12 et 14 et La plaque adjacente 14 et/ou 12. Une ouverture, au travers de laquelle la maische peut pénétrer dans Les chambres de maische, Limitées par les deux tissus 50 et 52, et/ou peut passer dans La section de conduit de La plaque suivante, est prévue sur Les bords inférieurs juxtaposés des tissus 50 et 52, dans La zone du conduit de maische 20. Lorsque La chambre de maische g est remplie, Les deux tissus 50 et 52 s'appuient sur Les renfLements du diaphragme 46 ou 48 et/ou de L'éLément support d'une plaque à chambre 12.
La première phase de L'opération de clarification est Le remplissage des chambres de maische g suivant la figure 3 : La maische, amenée dans Le conduit 20, est poussée entre Les deux tissus 50 et 52 de chaque chambre g, jusqu'au remplissage de cette dernière, les tissus 50 et 52 étant alors supportés par Les renfLements du diaphragme adjacent 48 (ou 46) et/ou de la plaque à chambre 12.
Lors du remplissage, Les orifices d'aération 16 des pLaques à diaphragmes 14 sont raccordés au conduit d'air 18, tandis que Les canuLes 14.2 et 14.3 de chaque plaque à diaphragme 14 sont reliées au conduit 28 et/ou 30, Les canuLes 12.4 et 12.1 de chaque plaque à chambre étant reliées au conduit 32 et/ou 26, si

La deuxième phase de L'opération de clarification est L'extraction de La première partie du premier moût suivant La figure 4 : après La coupure entre L'orifice d'aération 16 de chaque plaque à diaphragme et Le conduit d'air commun 18, et après La jonction des canules 14.2 et 14.3 de chaque plaque à diaphragme 14 avec Le conduit 28 et/ou 30, ainsi que des canules 12.4 et 12.1 de chaque plaque à chambre 12 avec Le conduit 32 et/ou 26, Les chambres g continuent à être alimontées en maische, jusqu'à ce que Le moût, sous La pression du flux ultérieur de maische, s'échappe dans Les cavités a à d, à partir desquelles il est évacué par Les canules et conduits cités, qu'il est possible de regrouper, comme Le montre la figure 4, et notamment la figure 9 pour trois chambres de maische g adjacentes.

Dans cette quatrième phase, les orifices d'aération 16 des plaques à diaphragme 14 ne sont pas raccordés, ou mieux, sont fermés, comme dans la cinquième phase suivante.
La cinquième phase de L'opération de clarification est la production des deuxièmes moûts seconds, suivant la figure 7 : à cet effet, les jonctions des deux canules de chaque plaque 12 ou 14 sont raccordées aux deux conduits associés à chaque plaque, si bien que L'eau de brassage pénètre dans Les cavités b et/ou d par les conduits 28 et 32 et par les canules 14.2 et/ou 12. 4, et que le moût second, dans les chambres c et a, s'échappe par les canules 14.3 et/ou 12.1 et par les conduits 30 et/ou 26. Une couche de barrage de substance visqueuse à base de protéines, formée pendant la quatrième phase sur la face interne de tissus individuels ou de tous les tissus 52 et/ou 50, est alors effectivement dissoute.
Les particules visqueuses sont éliminées du tissu par l'eau de brassage, qui traverse chaque chambre de maische g, et rapprochées du tissu en vis-à-vis, qu'elles ne doivent toutefois atteindre qu'en mineure partie, pour qu'une quantité maximale de substance visqueuse se situe dans Le gâteau de drêche, extrait ultérieurement, et non sur les tissus. IL ressort d'une comparaison des figures 6 et 7 que la répartition des solides dans la maische est unilaté-

La sixième phase de L'opération de cLarification est La production des derniers moûts seconds avant L'extraction de La drêche, par pressage final de La maische : Les canuLes des plaques 12 et 14, et Les orifices d'aération 16 des plaques à diaphragmes 14, sont naturellement raccordés comme dans Le pressage préaLabLe (figure 5), et Le dernier moût emprunte Les mêmes parcours d'évacuation, que Le premier moût produit lors du pressage préalable. La pression d'air doit toutefois se situer entre 2 et 6 bars, pour que la phase liquide sorte des chambres de maische g et y Laisse un gâteau de drêche exempt de moût, qui tombe dans Le silo à drêche en attente, après L'ouverture du paquet de plaques et la séparation mutuelle de ces dernières.
