Abstract
La presente proporciona una composición acuosa que contiene sal, ácido acético y azúcares la cual puede utilizarse como una salsa o un condimento. La ventaja de la presente es que el crecimiento de levaduras y/o mohos en productos alimenticios acuosos es reducido, lo cual conduce a una buena conservación de la composición. Esto se ha logrado utilizando un nivel de sal relativamente bajo y sin conservantes, lo que hace que este producto sea producto muy versátil: un chef puede utilizarlo libremente, sin riesgo de excederse en el nivel de sal de un plato de comida preparado. Finalmente, el producto contiene azúcares y ácido acético, y tiene un pH entre 3 y 4,6.
