Abstract

La presente se refiere a un quitosano en forma de polvo micronizado, a su utilización para luchar contra ciertas levaduras, tales como Brettanomyces, y a un método de tratamiento de un líquido alimenticio. La presente se refiere, en particular, a un quitosano insoluble en agua en forma de polvo micronizado, cuya granulometría está comprendida entre 5 y 50 mm, y a su utilización en el tratamiento de líquidos alimenticios y/o para luchar contra Brettanomyces.
