Abstract
La presente invencion está relacionada con un método para la obtencion de una fraccion de aceite de palma con bajo contenido de saturados y dicha fraccion de aceite de palma. Reivindicacion 1: Un método para la obtencion de una fraccion de aceite de palma con bajo contenido de saturados que comprende las etapas de: Cristalizar el aceite de palma RBD (refinado, blanqueado y desodorizado) con un índice de yodo entre 48 y 55 en un cristalizador dinámico a una temperatura final entre 15sC a 22°C preferiblemente entre 17°C a 20°C, con un tiempo total entre 18 y 28 horas preferiblemente entre 20 a 24 horas a una velocidad de agitacion entre 700 y 1800 rpm preferiblemente entre 800 a 1200 rpm; Filtrar la lechada obtenida de cristales en un filtro de membrana con una presion final entre 2000 a 10000 HPa preferiblemente entre 3000 y 8000 HPa para obtener una primera oleína de palma, Tomar la oleína del paso anterior y adicionar un agente promotor de cristalizacion y llevar a una temperatura final entre 5sC y 12°C preferiblemente entre 6°C y 10°C, con un tiempo total de proceso entre 22 y 30 horas entre 24 y 28 horas a una velocidad de agitacion entre 700 y 2000 rpm preferiblemente entre 800 y 1800; filtrar la lechada obtenida de cristales en el filtro de membrana con una presion final entre 5000 y 20000 HPa preferiblemente entre 6000 y 18000 HPa para obtener una segunda oleína con contenido bajo de saturados. Reivindicacion 9: Una fraccion de aceite de palma, oleína, caracterizada porque tiene un contenido de ácidos grasos saturados entre un 32 y 38% preferiblemente entre el 33% al 37.
