Abstract
Método para producir un extracto purificado de Quillaja saponaria Molina solo o coadyuvado con oligosacáridos y/o polioles para ser usado como mejorador de la estabilidad y características de la espuma de cervezas. Las cervezas por su procesamiento, uso de cebadas de baja calidad proteica y uso de fuentes de carbohidratos diferentes a la cebada, reducen sus características de espuma tanto en calidad como en estabilidad. El método solicitado contempla el uso de un extracto de saponinas de quillaja, estabilizado con un pool enzimático para disminuir la actividad de polisacáridos y proteínas, permitiendo mejorar la calidad de la espuma y no afectando la estabilidad coloidal de la cerveza.
