Abstract

Composicion que comprende un ingrediente sensible, y en donde el ingrediente sensible se encuentra dentro de un recubrimiento protector que comprende una matriz de quitosana. Adicionalmente, la presente se relaciona con métodos para estabilizar un ingrediente sensible. Más específicamente, se relaciona con un método de estabilizacion que comprende los pasos de: preparar una mezcla de un alginato de metal alcalino; anadir a la mezcla un ingrediente sensible; crear una corriente de dicha mezcla, que comprenda un ingrediente sensible, cortar la corriente para formar una esfera; dejar caer esa esfera en una fuente de quitosana, formar una esfera recubierta de dicho ingrediente sensible dentro de un recubrimiento protector que comprende un alginato de quitosana.
