Comprende un tanque (1) para albergar alimentos a cocer-enfriar, medios de llenado/vaciado para llenar/vaciar dicho tanque (1) con un líquido de coccion o enfriamiento, y medios de calentamiento para calentar el líquido. El tanque (1) comprende una region inferior (1a) y una region superior (1b), y medios de circulacion para captar líquido de la region inferior (1a) desde varias salidas (3a) situadas en una pared lateral inferior (7a) e introducirlo a la region superior (1b) a través de varias entradas (4b) situadas en una pared lateral superior (7b), y para captar líquido de la region superior (1b) desde varias salidas (3b) situadas en otra pared lateral superior (8b) e introducirlo a la region inferior (1a) a través de varias entradas (4a) situadas en otra pared lateral inferior (8a), generando una conveccion forzada difusa en régimen turbulento.
