Abstract

Leche tratada con proteasas, la leche tiene una resistencia a la coagulacion ácida que es superior a la resistencia de una leche no tratada, y una biodisponibilidad de calcio incrementada para un animal que consume a la leche tratada, donde la leche tratada puede ser consumida directamente o puede ser utilizada para preparar productos alimenticios. La leche tratada de acuerdo al método comprende agregar una proteasa a la leche para obtener una proteolisis parcial, en donde la proteasa puede ser subtilisina, bromelina, papaína, tripsina, pancreatina, proteasas de Aspergillus sp, proteasas de Tetrahymena sp, proteasas de Bacillus subtilis, B. Amyloliquefaciens y B. Licheniformis y combinaciones de los mismos.
