Abstract

Un aparato para la refrigeracion o congelacion de artículos, particularmente artículos alimenticios incluye un modulo de entrada, un modulo de salida y puede incluir uno o más modulos intermedios. Los modulos pueden ser conectados para proveer una solucion optima en un proceso de congelacion o refrigeracion de alimento. Cada modulo incluye por lo menos una porcion de una cinta para conducir artículos y un propulsor accionado a motor para hacer circular una corriente de gas criogénico alrededor de los artículos. La velocidad de la corriente del gas criogénico es aumentada a través del uso de uno o más elementos que manejan incidencia creando chorros de incidencia arriba y debajo de la cinta. El elemento que maneja incidencia puede ser una placa que tiene una serie de agujeros o puede ser una serie de canales. La configuracion del elemento que maneja incidencia afecta el régimen de transferencia de calor desde la mezcla frigorífica a los artículos. Un rociador para rociar mezcla frigorífica líquida dentro de los chorros de incidencia para proveer una congelacion inmediata de la superficie de un artículo. Los tabiques entre modulos permiten al usuario controlar el flujo de mezcla frigorífica y el diferencial de presion entre modulos. Se usa una válvula de bolsa accionada neumáticamente para hacer vibrar los elementos que manejan incidencia para quitar nieve y hielo. El vibrador puede ser accionado por nitrogeno líquido vaporizado comprimido de la misma fuente que la que se usa para enfriar y/o congelar los artículos alimenticios.
