Abstract

Procedimiento para la elaboración de un producto cárneo capaz de ser cocido en un horno de microondas, que comprende las etapas de: congelar la piezacárnea entera entre -10 a 20°C; cortar la pieza congelada en porcioanes individuales; descongelar parcialmente cada pieza individual con ablandamientode sus superficies principales hasta una profundidad de 1 a 3 mm, conservando el núcleo congelado; contactar cada superficie de cada pieza individual con unasuperficie metálica caliente entre600 a 800°C durante 2 a 3 minutos; sellar el perímetro de cada pieza individual de igual modo que en la etapa anterior;envasar cada pieza individual; congelar a una temperatura comprendida entre -10 a -20°C.
