Abstract

pronalazak se odnosi na novi autohtoni soj Lactobacillus delbrueckii subsp. bulgaricus OB2. Ova bakterija mlečne kiseline ima dobru sposobnost stvaranja aciditeta, viskoziteta, arome i sinhronizacije sa drugim bakterijama mlečne kiseline iz kolekcije Instituta za mlekarstvo iz Beograda, što je značajno za industriju kod dobijanja fermentisanih proizvoda. Takodje, ovaj soj poseduje i izraženu sposobnost asimilacije holesterola te može imati i terapeutski značaj.the invention relates to a new indigenous strain of Lactobacillus delbrueckii subsp. bulgaricus OB2. This lactic acid bacterium has a good ability to produce acidity, viscosity, aroma and synchronization with other lactic acid bacteria from the collection of the Institute of Dairy Science in Belgrade, which is significant for the industry in the production of fermented products. Also, this strain has a pronounced ability to assimilate cholesterol and may have therapeutic significance.
