Abstract

The invention relates to the green coffee bean fermentation method, which shortens the roasting time of the coffee beans and saves energy, to be applied before the roasting process of the coffee beans. In particular, the invention relates to the green coffee bean fermentation method, which includes the process of treating the coffee beans with bacteria in the range of 1 -6 hours.
