Abstract

La présente invention concerne les mutations touchant les gènes de l'amidon synthétase du riz mutant Tx2 qui sont associées à des teneurs en fibres alimentaires et en amidon résistant améliorées dans l'endosperme. Les teneurs accrues en fibres alimentaires et en amidon résistant chez le riz ont pour résultat un indice glycémique bas, d'une valeur de 51,2 + 5,2, ce qui fait que ces variétés de riz sont très recherchées par les diabétiques. Les mutations touchant les gènes de l'amidon synthétase ciblent la modification structurelle de l'amylopectine plutôt qu'elles n'entraînent une augmentation de la teneur en amylose, et ce, sans affecter les caractéristiques de cuisson des grains de riz. La mutation touchant le gène SSIIa est également associée à un moindre allongement de chaîne dans la forme L de l'amylopectine si bien que la longueur de chaîne de l'amylopectine peut être modifiée dans les variétés de riz Indica.
