Abstract

The invention relates to a beverage comprising as a natural preservative a glycolipid of the formula (I) where n is 2, R1 is identical or different and denotes H or COCH3, R2 is identical or different and denotes H or (a), wherein m is 1, 2 or 3, R3 is identical or different and denotes H or OH, and R4 denotes OH or OCH3, R5 denotes H or (b) or (a), where m is 1, 2 or 3, R6 denotes H or OH and R7 denotes H or OH or =O, or a salt of the glycolipid.
