Abstract
The present invention relates to an acidophilus milk made from animal bone, in particular mammal bone and preparation method thereof. Its preparation method comprises the following steps: cleaning the bone and cutting them into the 30mm-length pieces; liquefying the cut bones at the temperature of 222.9°C and the pressure of 2.5MPa; mixing degreased milk powder with the liquefied bone juice; sterilizing and cooling the mixture; and lactic acid fermenting.
Description
Acidophilus milk made from mammal bone and preparation method thereof
Field of the invention
The present invention relates to an acidophilus milk made from animal bone, in particular mammal bone and preparation method thereof.
Background of the invention
In the past, many efforts were made to prepare the nutritious foods from animal bone, for the animal bone contains a large amount of protein, essential amino acid, calcium, phosphor, etc.
In order to enhance absorptivity of calcium which is good for human health, the methods that produce calcium powder through steps of soaking the bones of the animals in slaked lime solution, taking out, degreasing, drying and pulverizing, have been discovered.
In addition, the technology was developed to prepare the beverages such as yoghurt and condensed milk by using the bone powder or protein liquid produced from the animal bone.
CN02107624 "Yoghurt containing bone protein liquid and preparation method" disclosed the method that prepares the bone yoghurt from the fresh milk through adding the bone protein liquid extracted from the fresh bone of animal to the said fresh milk, nano-class superemulsifying, sterilizing and fermenting.
CN200710016156,9 "Condensed milk made from bones" disclosed the method that produces the condensed milk containing bone powder. In the method, the condensed milk is made by mixing fine bone powder with milk.
The object of the present invention is to extract all nutrients from the bone and marrow and prepare acidophilus milk rich in calcium, phosphorus and protein that are good for human health by liquefying the animal bone with the high pressure and temperature.
Summary of the invention
One aspect of the invention relates to acidophilus milk prepared from mammal bone.
In general, acidophilus milk is the lactic fermented milk made by the lactobacillus acidophilus, so that it can strongly inhibit the intestinal bacteria and also promote the digestion and absorption.
Another aspect of the invention relates to the method of preparing acidophilus milk from mammal bone.
This method comprises the following steps: cleaning and cutting of the bone, liquefying, mixing, sterilizing and cooling, and lactic fermenting. '
Detailed description of the invention
The method for preparing acidophilus milk from the mammal bone comprises the following steps: cleaning and cutting of the bone, liquefying, mixing, sterilizing and cooling, and lactic fermenting.
In cleaning and cutting step, the bones are cleaned and cut into the 30mm-length pieces.
These pieces are liquefied in the high-pressure tank using the steam from saturation steam boiler. At the top surface of the high-pressure tank, there is a hole(hereinafter a top hole) to supply the said bone pieces and at the bottom surface, a hole(hereinafter a bottom hole) to take the residue out. The upper part of the tank has a high-pressure valve that is connected with the saturation steam boiler. The high-pressure valve is to deliver the saturated steam into the tank. The lower part of the tank has an exhaust valve through that the bone juice can be drawn out. The saturation steam boiler is powered by electricity. The heat-resistant rubber packing is fitted into the lids covering the holes in the top and bottom surface of the tank, so that the high-pressure tank can be covered tightly.
In liquefying step, the high-pressure valve, the exhaust valve and the bottom lid are firstly closed. The bone pieces are charged with the stainless steel rod through the top hole. Then the top lid is closed and the high-pressure tank is covered tightly. Then the electric power of the saturation steam boiler is turned on. When the temperature of the saturation steam boiler reaches 222.9°C and the pressure reaches 2.5MPa, the high- pressure valve is opened. When ,the temperatures of the high-pressure tank and the saturation steam boiler reach 222.9°C and their pressures reach 2.5MPa, i.e. the temperature and the pressure of the high-pressure tank and the saturation steam boiler are in equilibrium state, the electric power of the saturation steam boiler is turned off. After remaining the equilibrium state for 5 minutes, the high-pressure valve is closed and the exhaust valve is opened to let the liquefied bone juice come out.
In mixing step, the degreased milk powder is mixed with the bone juice. At this time, the milk powder is added in the amount of 10% of the bone juice.
In sterilizing and cooling step, the mixture is boiled at the temperature of 100°C for 20 minutes, while being stirred. Then the mixture is rapidly cooled to the temperature of40~45°C.
In lactic acid fermenting step, a spore culture fluid in the amount of 1.25% of the mixture is added to the mixture. The spore culture fluid is made by mixing Lactobacillus Bulgaricus and Streptococcus in the ratio of 1 :4. And then the mixture is fermented at the temperature of 40~43°C for 4-5 hours.
Claims
1. Method for preparing an acidophilus milk from mammal bone, characterized by comprising the following steps;
a. cleaning the bones and cutting them into the 30mm-length pieces;
b. liquefying the bone pieces using a saturated steam at the temperature of 222.9°C and pressure of 2.5MPa;
c. mixing the degreased milk powder in the amount of 10% of bone juice with the liquefied bone juice;
d. sterilizing by means of boiling the mixture at the temperature of 100°C for 20 minutes and cooling rapidly to the temperature of 40~45°C; and e. adding a spore culture fluid in the amount of 1.25% of the mixture and lactic acid fermenting at the temperature of 40~43°C for 4-5 hours.
2. Method of preparing an acidophilus milk from mammal bone according to claim 1, characterized by maintaining the equilibrium state of the high-pressure tank and saturation steam boiler at the temperature of 222. °C and the pressure of 2.5MPa for 5 minutes.
3. Method of preparing an acidophilus milk from mammal bone according to claim 1, characterized that the spore culture fluid is made by mixing' Lactobacillus Bulgaricus and Streptococcus in the ratio 1 :4.
