DESCRIPTION
DEVICE FOR COOKING BY MEANS OF ELECTRICAL RESISTANCE
RELATED ART
The invention relates to cooking device which is used for cooking and/or heating foods.
The invention relates to particularly cooking device which ensures cooking of all kinds of foods in a short time, without losses of flavour, water and vitamins; and transmitting heat to all of the food evenly, without temperature difference.
BACKGROUND OF THE INVENTION AND THE DRAWBACKS OF THE KNOWN APPLICATIONS
In the catering sector, products are still cooked in devices such as tilting pan or boiling tube. These devices are heated both directly on fire or by means of using hot oil and steam in an indirect manner either. Heat is transmitted as a priority to metal material and to the product form the metal by way of convection. During this process, heat of the products which are close to the surface increases more rapidly in comparison with the products which are farther to the surface. Heat of the products which are close to the metal surface increases more than necessary with the time passing in order for the heat of the products which remain in the central spot or on the top should increase at the rate desired.
In the present applications, cooking process takes a long time and the product comes to loss of quality for overcooking. When it is desired to do more rapid cooking or perform heating process, microwave ovens are used as an alternative. Although heating product using microwave oven is not always practical, products can easily reach a temperature above the temperature desired. It is observed that they cause excessive heating locally particularly because of the product not being uniform. Therefore, after reheating process, local burning spots are found inside or on the food products. When the heating value which is required to prevent overheating and burning is reduced, sufficient heating process can no longer be obtained particularly in the centre of the food product. That is, every part of the product can not be heated evenly. With regard to overheating of the product, the stage of taking it out of the microwave generally poses a problem. When rapid cooking or heating process is desired to be performed with the microwave ovens, the product requires being in a certain thickness. In the event that the product is not uniform in the said ovens, cooking at the productivity desired can not be achieved. When necessary measures are not taken, microwave energy which is emitted from the oven to the environment has negative effects on human health.
When two different phases contact, they pose a potential. The systems which are comprised of two different phases in this manner are called electrodes. In the present applications, electrodes are located on both sides of the cylindrical body. The product which provides electrical conduction is required to fully contact with the electrodes. Production is limited because of the fact that the electrodes are on the sides, loading and unloading processes become hard.
In the inventions according to the prior art, the body where cooking is done is a stationary body. Solid food product inside of the liquid is contained between the both electrodes. When the fact that the electrodes are located only on the sides is taken into consideration, it takes a long time for electric current to heat or cook by means of contacting all of the product. Although there are applications similar in connection with the device according to the invention, their modes of application vary. The patents with publication numbers US3873742 and US4161908 relate to the said cooking devices.
In the application with publication number US3873742, body of the device is stationary. The process of loading of the product and unloading of it after cooking is performed from the sides. It does not have a collapsible lid system. In this invention, there is a body embodiment which is formed by means of lengthwise splitting a cylindrical body into two. After loading the product to be cooked into the body, cooking process is performed by means of connecting the open ends of the semi cylinders which have come into existence as the result of splitting with one another. In a case like this on the other hand, hardships are experienced during loading and unloading of the product. In addition, electrodes have been placed to the both sides of the device and it is necessary the opening between the two electrodes to be filled to run it. In this case, for realization of electrical conduction, the product has to be cooked as much as the device's body allows, that is, until the opening between the electrodes has been filled. Therefore, this is not possible when small production is desired to be done, more than necessary is done because of the adversities which are brought along by the design.
In the application with publication number US4161908 on the other hand, device's body is stationary as in the previous application and the electrodes have been positioned on two ends of the device. In addition, for cooking the product by means of realization of the electrical conduction between the electrodes must be completely filled with the product.
As a conclusion, the presence of the need for cooking device which eliminates the drawbacks mentioned above and the inadequacy of the present solutions have made it necessary to make an improvement in the related art.
PURPOSE OF THE INVENTION
Based on the known situation of the art, purpose of the invention is to realize qualified and short timed cooking using an electrical cooking method.
Another purpose of the invention on the other hand is to cook the product by means of electrical conduction over the product.

DETAILED DESCRIPTION OF THE INVENTION
Cooking device (1) according to the invention comprises stainless flange (7) which is connected with the lateral surface of the cylindrical body (3); conducting circle (9) which is positioned between the insulating disc (8) and the flange (7); electrical connection apparatus (6) which is in contact with the conducting circle (9); and lid seating slot (4) which is positioned on the body (3); and the lid (10) which is placed to this body (4). There is a pin (2) which is aligned with the insulating disc housing (8.1 ) and the stainless connector housing (5.1 ); and passes through the centre of the body (3). To supply electricity to the said pin (2), there is an electrical transmission element (1 1 ) which is connected to the lateral section of the body (3); and through which the pin (2) passes. Cooking device (1 ) according to the invention comprises stainless body (3) which is used in the food sector; is used for cooking and/or heating of the food product that is placed inside of present volume; cooks and/or heats the product by means of conducting electric current over it; holds the product to be processed in itself in the meantime; makes the current conducted over the product by means of forming different electrical terminal.
Cooking device (1 ) according to the invention is moved by means of stainless pin (2) in a thin, long cylinder form, ensuring rotation of the said body (3) around axis. To connect the lid (10) with the body (3) into which the product on which cooking process is performed is placed, there is a rectangular opening on the top surface of the body (3). The stainless lid seating slot (4) which is used for loading and unloading of the product to the body (3) and is placed to the rectangular opening is positioned to this opening. The said lid (10) performs the function of opening and closing and ensures retaining of the products in the body (3) being joined with the lid seat housing (4).
Cooking device (1 ) according to the invention comprises
• Stainless connector (5) which ensures rotation of stainless body (3) by means of pin (2),
• electrical transmission element (1 1 ) which is used to make the body (2) rotate by means of supplying electricity to the pin (2), • a conducting circle (9) which is used to supply the body (3) with electricity,
• electrical connection apparatus (6) which is used together with the said conducting circle (9),
• insulating disc (8) which is used to prevent electrical conduction between different terminals
• a stainless flange (7) which is used to prevent the product inside of the body (3) from leaking.
Here, the said insulating disc (8) is an electrically insulating element which can resist to heat up to 100°C temperature. Because this disc (8) comes between two electrodes, it is selected in a manner both to ensure impermeability, and not to make short circuit between the electrodes with the proper designation of the connectors. After the product is completely filled into the body (3) by means of opening the lid (10) of the cooking device (1 ) according to invention, the lid (10) is closed. After the lid (10) is closed, it is locked up pneumatically. When the electrical transmission element (1 1 ) contacts the body (3) electrode, electricity passes to the body (3). When the food which is contained between internal electrode and external electrode completes the circuit, the current gets conducted over the food. Pin (2) is supplied with electricity which is in different terminals by means of insulating disc (8) and conducting circle (9). Product between two different terminals displays the feature of resistivity; and it resists to electric current. Because the product is inside of a closed cylindrical body (3), current gets conducted over all of them and thus heat of the product increases as the current gets conducted over it. With the rotation of the said device (1 ) around its own axis by means of the pin (2) which passes through the centre of the cooking device (1 ), the circuit is completed between the electrodes and it is no longer necessary for the food to be contained inside of the liquid and a regular conduction of electric current over the product is ensured. Thus, passing of food values to water during cooking are prevented, cooking and/or heating every part of the product evenly is realized.
Cooking device according to the invention has to be cleaned and purified from the cleaning chemicals before the stage of cooking the product. In the cooking stage, it is necessary to wait for some time after the product (for example; 60-65 kg raw, not marinated veal) is put into the body (3) in order for it to settle inside of the said device (1 ). Electric conduction is ensured by supplying electricity to the pin (2) by means of electrical transmission apparatus (1 1 ) in order to the body (3) begin rotating. In this stage, while ampere rise is monitored using the ampere meter which is connected to the cooking device (1 ), internal pressure inside of the device (1 ) is also monitored by means of the manometer. After cooking process of the product is completed, electrical conduction is deactivated, after the steam pressure forming in the body (3) is reduced lid locks are unlocked pneumatically.
Cooking device (1 ) according to the invention cooks a meat meal of 60-65 kg in 7 minutes, with a water loss of 25%. When on the other hand legume is cooked using the said device (1 ), it is cooked in 12 minutes and without stripping its outer skin. Therefore, cases such as water loss which originated from cooking for long periods of time and loss of food values of the foods are prevented.
In a preferred embodiment of the invention, body (3) to which application is made can also be selected in different forms other than that of cylinder.

Claims

1. The invention is cooking device (1 ) which is used in the food sector; ensures cooking and/or heating of the food product that is placed inside of present volume, and is characterized in that; it comprises
• body (3) on which the product is positioned and makes the current conducted over the product which will cook and/or heat by means of forming different electrical terminals via electrodes, and
• at least one pin (2) which ensures regular conduction of electric current over the product with the rotation of the said body (3) around its own axis.
2. Cooking device (1 ) according to Claim 1 , and is characterized in that; the said body (3) is manufactured from preferably stainless metal and/or derivatives.
3. Cooking device (1 ) according to Claim 1 and 2, and is characterized in that; the said body (3) is in cylindrical form.
4. Cooking device (1 ) according to Claim 1 to 3, and is characterized in that; it comprises pin which is manufactured from metal and/or derivatives.
5. Cooking device (1 ) according to Claim 1 to 4, and is characterized in that; it comprises at least one lid seating slot (4) which is connected to the said body
(3) ; ensures loading and unloading of the product to the body (3).
6. Cooking device (1 ) according to Claim 1 to 5, and is characterized in that; it comprises at least one lid (10) which is connected onto the said lid seating slot
(4) ; ensures the product to be retained in the body (3).
7. Cooking device (1 ) according to Claim 1 to 6, and is characterized in that; it comprises at least one connector (5) which ensures rotation of the said body (3) by means of the pin (2).
8. Cooking device (1 ) according to Claim 1 to 7, and is characterized in that; it comprises at least one flange (7) which prevents the product from leaking during cooking.
9. Cooking device (1 ) according to Claim 1 to 8, and is characterized in that; it comprises at least one insulating disc (8) which prevents electrical conduction between different terminals.
10. Cooking device (1) according to Claim 1 and 9, and is characterized in that; it comprises at least one conducting circle (9) which is used to supply the body
(3) with electricity.

Cooking device (1) according to Claim 1 to 10, and is characterized in that; it comprises at least one conducting circle (9) which is used to supply the body (3) with electricity; and at least one electrical connection apparatus (6) which is used together with the said circle (9) and ensures electricity to be supplied to the body.
12. Cooking device (1 ) according to Claim 1 to 11 , and is characterized in that; it comprises at least one electrical transmission element (1 1) which is used to supply electricity to the pin (2).
13. Cooking device (1) according to Claim 1 to 12, and is characterized in that; in the body (3) which rotates by means of the said pin (2), the current which flows over the product is alternating current.
14. The invention is cooking method of device which is used in the food sector; ensures cooking and/or heating of the food product that is placed inside of present volume, and is characterized in that; it comprises the operation steps of
• Supplying the body (3) with electricity by means of engagement of the electrical connection apparatus (6) to supply electricity to the conducting circle (9), · Rotating the body (3) as the result of supplying electricity to the pin (2) by means of electrical transmission apparatus (1 1 ),
• Cooking and/or heating the product.
15. Cooking device (1) according to Claim 14, and is characterized in that; the flange (7) which is placed between the edge of the body (3) and the conducting circle (9) is used to prevent leaks during rotation, cooking and/or heating.
16. Cooking device (1) according to Claim 14 and 15, and is characterized in that; electrical conduction between different terminals is prevented by means of insulating disc (8) which has been positioned between the conducting circle (9) and the connector (5).
