Abstract

The present invention provides apparatus and methods for aging a fermented liquid product, the method comprising contacting a liquid fermented product with wood chips over a period of time, wherein during a first part of said period of time the product is held at a reduced pressure for at least part of said period of time, thereby forming an aged fermented liquid product, and wherein the apparatus comprises a vessel adapted to house a liquid fermented product and wood chips disposed in the product, an air space above the product; and a vacuum system, in fluid connection with the airspace in the vessel, for controlling the air pressure in the vessel.
