Description

A DEVICE FOR CONTINUOUS PREPARATION OF HOT MASS AND A PROCESS
THEREFOR Field of the invention:
The invention relates to a device for continuous preparation of hot mass and a process therefore . The present invention particularly relates to a device for continuous preparation of hot mass which can be used for manufacturing of chiki, sweetmeat and other allied food products. The device of the present invention can particularly useful for preparation of large quantities of hot mass continuously in hygienic condition which can be used for manufacturing of chiki and other allied food products. The hot mass used for manufacturing chiki, sweetmeat and other allied food products prepared by using the device- of present invention, has standardized uniform tastes, improved and consistent product characteristics.
Background of Invention:
There are varieties of chiki made from peanut, sesame, coconut, cashew, pistachio, other nutshell cereals available in the market. They are preparing the hot mass required to manufacture the chiki in small quantity batches with manual operations. The other allied food products are also made from the above ingredients and by same operations
Traditionally, chiki is made manually, using small utensils, trays and hand rollers. The quality of such manually prepared chiki is inconsistent due to non-uniform processes employed. The chiki produced are non-uniform and inconsistent in quality, taste and appearance because it produced in manually and batch type operation. The commercial production of higher volumes by the manual and batch type operational method is non viable due to higher man power cost. It is unhygienic too due to manual handling.
Since chikis are very popular amongst the people as a food, there is a need to improve its quality and capacity of production under hygienic conditions with longer shelf life.
We have developed a device for the manufacture of chiki, sweetmeat and other allied food products for which a patent bearing no 208268 has been granted . The Device disclosed in the said patent is shown in Figs 1 to 4 of the drawing accompanying this specification . In the drawings Fig. 1 is an isometric view of the device disclosed in our patent no 208268 , Fig.2 is a batch cooker provided adjacent to the said device , Fig.3 is a non-contact hand held type temperature sensor and Fig.4 is control panel. The device for manufacturing of chiki, sweetmeat and other allied traditional ethnic Indian food products disclosed in our Indian patent no , 208268 comprises a batch cooker (18) and a main frame (1) provided with a stainless steel feeding tray (2) for holding the hot materials which are used for manufacturing of said products, a first gauging roller (3) for converting the hot material into a sheet / slab form, driven by motor (4), the motor (4) being fixed to the main frame (1), an inclined conveyor belt (5) driven by motor (6) which is also fixed to the main frame (1) said belt (5) carrying the sheet / slab formed to the guiding unit (7) which is fixed above the conveyor belt (5) for maintaining uniform thickness, a second gauging roller (8) attached to motor (6) for final adjustment of the thickness of sheet / slab as per settings in the thickness adjustment unit (9) fixed on the second gauging roller (8), the gauging roller (8) provided with mechanical screw for adjusting the thickness of the sheet / slab, a second conveyor belt (10) driven by motor (11) for carrying the sheet / slab formed to the longitudinal scrolling unit (12) driven by motor (15) for making cutting impression on the sheet / slab to the desired width, the holding roller (16) used for gripping and feeding the sheet / slab to the cross cutter (13) driven by motor (14) for cutting the sheet / slab at the desired length which is finally collected on a product tray (17),the motors (4,6,11,14,15) being powered by Control Panel (25) connected with Three Phase Power supply
In the device of the patent no 208268 the hot mass required to manufacture chiki , sweetmeat and other allied food products is made in the batch cooker where the complete operations like weighing of sugar , glucose and other raw material (peanut, sesame and coconut etc..) and handling of hot mass from batch cooker to above mentioned patented device are done manually. Because of the manual operation there may be chances of human error and so there may be chances of batch to batch variation in quality of the hot mass produced . Quality in terms of taste, colour, crispiness and hardness are also consequently effected. Besides as the hot mass prepared in the batch cooker is transferred to the device manually, it requires lot of man power and involves human touch to food material which is not advisable from safety and hygiene point of view. Besides that the hot mass prepared in the batch cooker and supplied to patented device is not continuous. So the device remains idle for some time which leads to low productivity. In case of the batch cooker, after using the batch cooker for 3 to 4 batches it requires cleaning which leads to wastage of material as well as wastage of time. And thus it affects the productivity too. To overcome the above mentioned drawbacks of the device of the patent no 208268 if a device is developed which will can used for continuous preparation of the hot mass used for manufacturing of chiki, sweetmeat and other allied food products in large volumes and having uniform qualities such as consistent tastes and uniform appearance , it would benefit the industry and the consumers.
Recognizing the importance of such a device for achieving the above objectives, we initiated R & D towards that direction. It should be noted that in this application, the invention is described with reference to chiki but it should not be construed to limit the scope of the invention as the invention can be applied to similar allied food products also.
Therefore, the main objective of the present invention is to provide a device for continuous preparation of hot mass used for manufacturing of chiki, sweetmeat and other allied food products in large volumes for commercial purpose.
Another objective of the present invention is to provide a device for continuous preparation of hot mass used for manufacturing large quantities of chiki, sweetmeat and other allied food products by fully automatically controlled process without manual handling at any stage .

Details of the Method of Continuous preparation of the Hot mass
The present invention is provided with a method for continuous preparation of hot mass of the ingredients used for manufacturing of chiki, sweetmeat and other allied food products using the device of the present invention.
As a first step, fill up sugar feeder hopper with sugar, mass feeder with roasted peanut powder, desiccated coconut or sesame as per requirement and Glucose tank with Liquid Glucose after thorough cleaning of hoppers and tank. Heating up Glucose up to 70 degree C temperature by circulation of hot water through internal heating coil. Switch on the power supply of all the equipments from the control panel (8). Make sure the continuous availability of utilities like hot thermic fluid oil of 210 degree C and compressed air of pressure 5 kg/ cm2.
The computer system (7) is equipped with SCADA software which is a readily available software used for designing process flow control. The software is customised as per requirements of various process sequences, temperature set points , process parameters, process recipe. By means of this software Computer system communicates with PLC (44) for automatic control of whole system. (like starting On / Off of Geared motor, speed control of geared motor through variable frequency drive ,operating control valve, controlling of various feeding rate etc.. ) In SCADA software of Computer system (7) select the pre-set recipe of product need to be manufacture and start the process. When the process starts through computer system(7), It gives commands to PLC(44) to start the operational sequences and it automatically opens pneumatically operated control valve (9) and thus starts feeding of glucose from the stainless steel glucose Tank (2) and starts the geared motor (10) of sugar feeder (1) to start the feeding of sugar simultaneously as per recipe of particular product to continuous cooker (4). It also starts the geared motor (13) of continuous cooker (4) at pre-decided speed. When feeding of sugar starts, the overall weight of sugar feeder(l) which is mounted on loadcell (15) start reducing continuously. Loadcell (15) gives continuous reading of weight of sugar feeder to loss in weight system (26) The loss in weight system (26) continuously measures the loss in weight per minute and regulate the speed of geared motor (10) by using variable frequency drive (21) to maintain the accurate feeding of sugar as per pre-set recipe, e.g. If the feeding of sugar is lesser than the required pre-set quantity, system will increase the speed of geared motor (10) by using variable frequency drive (21) and vice a varsa if feeding of sugar is more than the required pre-set quantity system will decrease the speed of geared motor by using the variable frequency drive (21). In the same way when feeding of glucose starts, after reaching the set temperature of 70 degree centigrade, the overall weight of Glucose Tank(2) which is mounted on loadcell (16) start reducing continuously. Loadcell (16) gives continuous reading of weight of Glucose tank(2) to loss in weight system (27) The loss in weight system (27) continuously measures the loss in weight per minute and regulate the position of pneumatically operated Control Valve (9) to maintain the accurate feeding of Glucose as per pre-set recipe.
The highly accurate flow of sugar and glucose goes in to continuous cooker (4). Hot thermic oil of 210 degree centigrade is circulated through the side jacket and hollow shaft of continuous cooker (4) to give required amount of heat to melt the sugar. The two stirrer like shafts (45) and (46) mix sugar and glucose and push the mixture forward. While traveling from one end to other end sugar gets melted and the hot syrup gets prepared. Temperature sensor (30) measures the temperature of hot syrup continuously. After achieving the set temperature, the computer system (7) gives command to open the pneumatically operated control valve (19) and the hot syrup flows out from the outlet (32) and falls in to continuous mixer (5) . At the same time computer system gives command to start the geared motor (14) of continuous mixer (5) , geared motor (11) of Mass feeder (3) and peristaltic pump (12) of flavor dosing system (6). The loss in weight system (28) continuously measures the weight of mass feeder(3) by using loadcell (17) and regulate the speed of geared motor (11) by using variable frequency drive (22) to maintain the accuracy of feeding of Raw material like Peanut , Sesame, Coconut or Rajgira. Similarly the loss in weight system (29) continuously measures the weight of flavor tank(20) by using load cell (18) and regulate the speed of peristaltic pump (12) by using the variable frequency drive (23) to maintain the accuracy of feeding of flavor as per recipe. The two stirrer like shafts (47) and (49) mix hot syrup, solid mass and flavor homogeneously while pushing it towards the outlet provided on the opposite end of continuous mixer (5). From the outlet(33) of continuous mixer (5) , continuous flow of homogeneous hot mass used for manufacturing chiki is received in large quantity. Method for Continuous Chiki manufacturing For the continuous manufacturing of chiki, the presently invented device for continuous preparation of hot mass is attached to the chiki making machine as disclosed in our Patent no 208268 . The attachment is to be made in such a way that from the outlet of continuous mixer (5) of the device of the present invention , continuous flow of homogeneous hot mass falls in to stainless steel feeding tray (2) of the Chiki manufacturing machine (31) as shown in Fig 7 by gravity. In the Chiki manufacturing machine (31) the hot mass is converted into sheet /slab of desired thickness while passing through the stainless steel feeding tray(2) , first guaging roller (3) and second gauging roller(8) . Then , this sheet /slab passes through the longitudinal scrolling unit (12) to get desired width and through motorized cross cutter (13) to get desired length and finally equal size chiki pieces are collected on the product tray(17)
