Abstract

To provide a fat composition containing a blend of an odiferous fat such as soybean oil with a roasted oil such as roasted sesame oil, which is substantially free from the inherent flavor of the roasted oil and shows relieved unpleasant odor characteristic to the starting material of the fat such as soybean oil (for example, the greenish odor of the soybean oil), back odor and burnt odor. A fat composition comprising an odiferous fat and a roasted oil which is produced via a deodorizing step, wherein back odor and so on can be relieved by controlling the roasted oil as described above of the fat composition to such a level that the odor of the odiferous fat per se can be substantially relieved and the flavor of the roasted oil as described above is substantially unnoticeable.
