Abstract

Disclosed is a mutant lipase which is produced by introducing a mutation into a lipase produced by a microorganism belonging to the genus Cryptococcus, Gibberella, Ustilago or the like so that the enzymatic activity of the lipase is increased. The mutant lipase is allowed to act on an oil-and-fat, thereby producing glycerol. Glycerol thus produced is added to a culture medium as a carbon source, and a microorganism capable of producing a substance of interest (e.g., an amino acid) is cultured in the culture medium, thereby producing the substance.
