Abstract
本発明は、α-アミラーゼの存在下、大麦又はその粉砕物を20°C以上80°C以下の温度で分解する分解工程を備える、大麦シロップの製造方法を提供する。本発明の方法によれば、粘度が十分に低い大麦シロップを製造することが可能となる。また、一態様において、本発明は、α-アミラーゼの存在下、大麦又はその粉砕物を45°C以上80°C以下の温度で分解する分解工程を備える、大麦シロップの製造方法を提供する。この態様の方法によれば、粘度が十分に低く、且つβ-グルカンに富む大麦シロップを製造することが可能となる。
