Abstract

La présente invention porte sur des légumes crus à enrobage bio-actif qui comprennent des compositions bio-actives enrobant les légumes crus. Ainsi, les compositions bio-actives sont efficaces pour dégrader le raffinose, le stachyose et le verbascose dans les légumes crus, lorsque ces derniers sont placés dans des conditions optimales de pH et de température. La présente invention concerne également des procédés de fabrication de légumes crus, enrobés et bio-actifs.
