Abstract

 本発明は、乾燥食品の製造後のひび割れ、損壊を防止することのできる改良材・方法及びこれを用いた乾燥食品の製造法を提供することを課題とする。  乾燥食品中に大豆蛋白質を構成する主要な貯蔵蛋白質であるグリシニンとβ‐コングリシニンのうち、グリシニン含量を低減させた大豆蛋白質と大豆食物繊維を改良材として配合することにより上記課題を解決できる知見を得、本発明を完成させた。
