Abstract

　本発明の目的は、α－ガラクトオリゴ糖以外の夾雑オリゴ糖を含有しない、簡便でかつ安価なα－ガラクトオリゴ糖の製造方法を提供することである。本発明によれば、ガラクトースを含む糖類を原料とするα－ガラクトオリゴ糖の製造方法において、Ｇｅｏｂａｃｉｌｌｕｓ ｓｔｅａｒｏｔｈｅｒｍｏｐｈｉｌｕｓに属する微生物を触媒として利用することを特徴とするα－ガラクトオリゴ糖の製造方法が提供される。
