Abstract

L'invention se rapporte Dispositif (10) de surveillance de la dégradation d'un produit périssable, ce dispositif étant destiné à être disposé à proximité du produit, ce dispositif comprenant: un module (12) de mesure du temps, tel qu'une horloge, et au moins un capteur (14) mesurant au moins une variable extrinsèque du produit représentative des conditions de conservation de ce produit, telle que la température, le degré hygrométrique, la composition de l'atmosphère, une mémoire programme (16) pour mémoriser un programme représentant un modèle de dégradation spécifique au produit surveillé, un processeur (18) calculant, par la mise en œuvre du programme représentant le modèle de dégradation, l'état de dégradation du produit en fonction du temps et des valeurs de la variable extrinsèque mesurées par le capteur, une mémoire de données (20) pour stocker des paramètres intrinsèques du produit, les paramètres intrinsèques du produit étant son pH, et/ou sa texture, et/ou son activité en eau, et/ou la quantité d'acide organique qu'il contient, et/ou son coefficient de transfert thermique, et/ou les flores limitantes qu'il contient, et/ou les produits de dégradation enzymatique, et/ou le potentiel redox, l'évolution des paramètres intrinsèques étant pris en compte dans le modèle de dégradation, de sorte que le calcul de la dégradation réalisé par le processeur soit fonction des seules variables extrinsèques et du temps.
