Abstract

Meat tenderising apparatus comprising a pressurising means and an irradiating means whereby, in use, the pressurising means is adapted to apply pressure to a meat product and the irradiating means is adapted to apply radiation to the meat product, and wherein the resulting meat product remains uncooked. Additionally there is described a method of using such apparatus and a tenderised meat product resulting therefrom to produce uncooked and tenderised meat products.
