Abstract

The present invention relates to a process for treating a fruit, vegetable or vegetable plant matter juice including the steps of: a) filtering the juice, b) removing water from the filtered juice to concentrate the proteins and other beneficial nutrients in the juice to form a concentrate, wherein steps a) and b) are operated at less than substantially 20°C.
