Abstract

A novel feruloyl esterase having a broad spectrum of hydrolytic activity against esters of hydroxycinnamic acids. More particularly a feruloyl esterase enzyme capable of hydrolysing esters of each of the hydroxycinnamic acids - ferulic acid, caffeic acid, p-hydroxycinnamic acid and sinapic acid, but not hydrolysing feruloyl dimers derived from hydroxycinnamic acids; or a variant, homologue or analogue thereof.
