Abstract

La présente invention concerne un procédé de production d'un produit alimentaire reconstitué élaboré à partir de morceaux d'aliments. Le procédé consiste à ajouter une composition comprenant un retardateur de durcissement et un hydrocolloïde, à un produit alimentaire qui contient naturellement au moins une substance qui provoque le durcissement de l'hydrocolloïde. Lorsque le produit alimentaire ne contient pas naturellement au moins une substance qui provoque le durcissement de l'hydrocolloïde, le procédé consiste à mélanger aux morceaux d'aliments, une substance qui, au contact avec un hydrocolloïde, provoque le durcissement de l'hydrocolloïde, puis à mélanger une composition comprenant un hydrocolloïde et un retardateur de durcissement, dans les morceaux d'aliments mélangés, et enfin à laisser durcir la substance.
