L'invention concerne un nouveau procédé de fabrication de (R)- et/ou (S)-2-Hydroxy-η-butyrolactones des formules (I) et (II), et/ou de (S)- et/ou (R)-2-Acyloxy-η-butyrolactones des formules générales (III) et (IV), consistant à transformer un 2-Acyloxy-η-butyrolactone racémique de la formule générale (V) en compositions des formules (I) et (II) au moyen d'hydrolases, les compositions des formules (III) et (IV) résultant de cette transformation.
