Abstract
The present invention relates to the manufacture of alcohol and can be used in distilleries for producing ethanol. The aim of the inventive method is to simplify said process, to accelerate said process and to improve the quality of ethanol. According to the invention, during fermentation the wort is heated to an optimum temperature for the yeast strain used and at the same time ethanol is distilled until the end of the alcohol forming process. Such a method allows for the reduction of the output of fusel oils, of ethers and of aldehydes by an order of magnitude; the ethanol obtained corresponds to rectified alcohol. The dregs remaining after fermentation have excellent qualities as cattle feed, in addition to low humidity.
