Abstract

L'invention relève du domaine agro-alimentaire; elle peut être utilisée pour la fabrication de pectine et se résume aux étapes suivantes: les matières premières contenant de la pectine sont soumises à l'hydrolyse-extraction à l'eau potable au moyen d'un traitement de cavitation dans un extracteur-désintégrateur hydroacoustique, l'indice de cavitation correspondant à K = (0.2-1.9); la pulpe ainsi obtenue est séparée en phases liquide et solide, sous l'action de forces centrifuges, avec un facteur de séparation de FR = (90-100); la phase liquide, obtenue après séparation et ayant un taux de suspension s'élevant à 0.5-0.6 % de sa masse, est soumise à une microfiltration supplémentaire qui utilise des membranes avec des pores de (1-10)106m, et ce jusqu'à ce que la proportion de la suspension atteigne 0.1 % au maximum de sa masse; on procède ensuite à une concentration par ultrafiltration en utilisant des membranes à base solide présentant des pores de (1-10)10-9m, la phase liquide circulant à la vitesse de 0,1 à 2,0 m/s et à la pression de 0,5 à 3,1 kg/cm2, au terme de quoi on obtient un concentré contenant de 3,5 à 4,2 % de substances riches en pectine; l'ultrafiltration est suivie d'une concentration complémentaire du produit filtré dans un concentrateur sous vide à deux corps à écoulement direct et de type pellicule-circulation, la dépression dans le condensateur devant être de l'ordre de 0,09-0,093 MPa; finalement, le concentré obtenu, qui contient de 8 à 14 % de substances riches en pectine, est séché à une température entre 75 et 92 °C.
