Abstract

Procédé d'extraction de la lignine des matières cellulosiques. Ces matières peuvent servir de catalyseurs dans la fermentation associée à la fabrication d'alcools, à l'aide de solutions de mélasse et de glucose à titre de matières premières. Il s'avère que, dans le cas des procédés utilisés et des résultats obtenus, les matières exemptes de lignine assurent une augmentation de la vitesse de fermentation alcoolique et du degré alcoolique final, par rapport à la fermentation réalisée en l'absence de ces matières. En outre, on propose l'utilisation de matières exemptes de lignine dans l'immobilisation de cellules de levure de fermentation. On a mis en évidence que les biocatalyseurs produits de cette façon sont utilisables dans la fabrication du vin et de la bière à basse température (de 0 à 5 °C) avec des périodes de fermentation satisfaisantes, mais aussi dans la fermentation d'un grand nombre de lots de fermentation à des températures normales et avec de courtes périodes de fermentation. Enfin, il s'avère que le biocatalyseur obtenu par immobilisation de cellules dans les matières cellulosiques exemptes de lignine est approprié pour la fabrication du vin et de la bière dans un réacteur à fonctionnement continu, ce qui a été démontré par le fait que le rendement du réacteur n'a pas baissé pendant les 65 premiers jours d'exploitation.
