Beit known that I, ALBRECHT BRINN- HAUSER, residing at and whose post-office address is N o. 91 Sulzbacherstrasse, of Nuremberg, Bavaria, in the Empire of Germany, manufacturer, have invented certain new and useful Im rovements in Machines for Slicing Meat, i ausages, and other Edibles; and I do hereby declare the following to be a full, clear, and exact description of them- ,vention, such as will enable others skilled in the art to which it appertains to make and use the same. I
This invention relates to a new or improved machine for cutting or slicing meat and similar edibles, more particularly ham and sausages.
The machine has the advantages of simplicity, reliability and cheapness, and of being easy to manipulate.
One form of the invention is illustrated in the annexed drawing, in which Figure 1 is a side view of the machine in section on line C-D of Fig. 2, and Fig. 2 a section on the line A-B of Fig. 1. Fig. 3 presents a detail.
The machine essentially comprises the frame a, the carriage or slide 6 and the rotary knife '0. It .is operated by means of the hand wheel d, the shaft e of which has bearings in the frame a. To the rear-end of the shaft e is fixed the bevel-wheel f which meshes with the bevel-wheel g on the shaft h mounted in the frame. To the outer end of the shaft h (Fig. 2) is fixed the wheel '5 connected by means of a chain or the like with the wheel 7c, which it is adapted to drive. The wheel 1c is fixed to the axle l of the knife 0, said axle Z having bearing in an arm m fixed to the frame.
The knife comprises a wheel-like su port n, the circumference of which is beve ed to receive the blade 0, which is screwed thereto.
The said blade 0' consists of several segments,
each of which is separately removable and replaceable so that in case of injury to one part of the blade the entire blade need not be replaced. An integral disk or ring can, however, be screwed to the support it instead of the segments referred to. In either case the blade must be inclined with the regard to the plane in which the'cut is to take place, in or-' der to facilitate its action.

To the upper end of the lever t the arm w is pivoted at v, said arm being pivoted at a: to a projection y, which is fixed to the slide 5. By this means the latter can be reciprocated parallelly to the plane of cutting. The slide bis provided with the dovetail guides 2 in which the meat plate 1 is movable.
()n this plate the meat or the like to be cut is placed, an engaging member or vertical plate 2 and the rack 3 being arranged on said plate 1 for that purpose. The plate 2 is provided with two rows of holes 4 which the hooks 5 of a pronged meat bar 6 engage. The latter is placed on the meat and holds it against the plate 1 by means of teeth, prongs or the like. The handle 7 is movable on the plate 8, being provided with slots 6 engaging the pins 9 fixed to the plate. One end of the said handle is provided with the bent nose 10 which is adapted to engage between the teeth 11 of the rack 3. By displacement of the handle 7 the said nose can be moved into and out of enga ement with the said rack. The hooks 5 can e inserted into the holes 4 as required.
To the underside of the movable plate 1 is fixed a projection 12, to which a lever 13 is pivotedl The curved part '14 of the latter is screw-threaded on its inside, so that said art 14 forms, as it were, one half of a nut, w ich engages the screw 15 mounted in bearings 16 on the under part of the slide b (Fig. 2). To the screw 15 is fixed a ratchet wheel 17,
which is so held by a spring 18 that it can only revolve toward the right, as seen in Fig. 3. Below this ratchet wheel 17 is arranged a slide 19 adapted to be moved by means of a rod 20 and to be fixed in the desired position by means of notches or holes 21 therein and the pin 22 fixed to the frame-(t of the machine. The rod 20 is held in position by means of a spring 23. To the slide 19 is fixed a guide frame 24, provided with a slot into which engages a pin 25 fixed to the machine The slide 19 is provided with a row which is held in an elevated position by a spring 27. These teeth are movable and can be. depressed by overcoming the pressure of the springs 27. The upward movement of the teeth 26 is limited by the steps or heads 28. The lever 13 is connected with a rod 29 guided in arms 30 fixed to the vertical plate 2. At the upper end of th.erod 29 is arranged a spring 31, which bears against one of said arms 30 and against a knob 32 at the end of the rod 29, so that the said spring tends to move the latter up'ward. The rod 2!) is provided with a 1'eccss33 and is guided in an aperture 34 in a hell-crank lever 35. The latter is pivoted at 36 to the plate 2 and is so operated by a. spring 37 that it always engages into the recess 33 on the rod 29. The free end to the lever 35 isprovided with a vertical linger 38 which in its end position ahuts against a pin 39 so as to operate the lever Ilti.
The action of the machine is as follows: The parts are at the beginning in the positions indicated by dotted lines. The upper end of the said lever 1 moves the rod w, by which means the carriage I is caused to reciprocate in the guides lit. The rotation of the wheel (I thus causes the knifeto he revolved and the slide 1) to he reciproeated. With the slide the parts 1. to Ill) thereon are. of course, also reciprocated. The edihle to he cut, for instance a sausage, is placed on the plate 1 and covered by means of the plate 6, the hooks 5 leinginserted into suitahle holes 4, according to the size oi the sausage. The handle 7 is then pushed over to the right till the projection 10 engages one of the teeth 11 of the rack 3. By this means the sausage is held firmly on the plate 1. lt is ohvious that when the slide moves toward the knife a slice will he cut off the sausage. In order to cut the next slice the sausage will have to he moved in a direction perpendicular to the plane of the knife. his is ell'ected in the following manner. While the slide i is moving in its guides 40 the ratchet wheel 17 on the screw Iii-slides over the slide 151. .-\ccording to the position oi the latter. one or more of the teeth 26 engages or engage the ratchet wheel and rotate the said wheel through the space of the corresponding numlrer of teeth. The screw .15 is revolved with the wheel 17, and since the screw threaded part 14 of the-lever 13 is in engagement with the said screw 15, the said lever 12'; is displaced on the latter. The lever 12% is ('Olllltt'lttl to the proieetion 12 ofthe plate 1 and to the rod 29 arranged in bearings 30 on the plate 2, so that the plate 1 is moved in the guides z and with it the plate 2, rods 29 and lever 36 are moved perpendicularly to the plane of the knife. The extent of this disphtcentent depends to the extent of the rotation of the screw 15, that is to say, on the numberof teeth 26 which engage the ratchet wheel 17. The displacement of the plate 1: can thus he regulated by adjusting the slide by hand, by means of the rod 20. The sausage being held fast on the plate 1, the displacement of the latter causes the fornier to he moved toward the cutting plane, and the thickness of the slices to be cut can be regulated in the manner described. \Vhen the plate 1 has advanced farthest toward the knife the vertical finger 38 of the lever ahuts against the pin 39 on the frame a and is by this means pushed back in order tomt-ate the lever 35 against the pressure of the spring 37 (from left to right, Fig. 2) so that said lever 35 is disengaged from the recess 33 in the rod 29. The said rod 29 is thereupon moved upward by the spring 31 into the position indicated in Fig. 1 hv dotted lines, and moves with it the lever13, which is also moved into the position indicated by dotted lines in Fig. 1. hen the parts are in these positions the part 14 is disengaged from the screw 15, so that the rotation of the latter no longer causes the lever 13 and the plate 1 to he displaced. Then the plate 1 is pushed back in its guides z the lever 35 is rotated back by the spring 37 and engages into the recess 33 in the rod 29 when the latter has been pushed into its lower position by pressure on the knob 32.
During each return movement of the slide I) the ratchet wheel encounters the inclined -surfaces at the upper ends of the teeth 26 and depresses the latter against the pressure of the springs 27, so that the slide 1) is moved ment. of the plate 1 in a direction perpendicular to the plane of the knife.
What 1 claim and desire to secure by Letters Patent is:
1. In a meat. cutting machine the combination wit-l1 a revoluble knife ofa supporting table, means effecting reciprocation of said table and rotation of said knife, 2. meat plate slid-ably mounted on said table, mechanism effecting movement of said plate toward said knife, said mechanism including a ratchet wheel and spring mounted rack teeth cooperating. therewith, means whereby the said rack teeth may be adjusted with respect to said ratchet wheel thereby varying the travel of said meat plate, and means whereby said rack teeth may be locked in their adjusted position.
2. In a meat cutting machine the combination with a revoluble knife, of a. supporting table, means efiecting reciprocation of said table and rotation of said knife, a meat plate slidably mounted on said table, mechanismeffecting movement of said plate toward said knife, said mechanism including a ratchet wheel and rack teeth, springs for each of said teeth whereby one tooth may be depressed independent of the remaining teeth.
3. In a meat cutting machine the combination with a revoluble knife, of a sprocket wheel therefor, a counter shaft provided with a sprocket wheel on one end, a chain cooperating with said sprocket wheels, a gear mounted on the opposite end of said countershaft, a main drivin shaft provided with a gear adapted to mes h with the gear of'said countershaft, a radial arm mounted on the gear of said countershaft, a link pivotally connected with said radial arm, a rocking lever pivotally mounted to a stationary part and connected with said link, a supporting table reciprocating in the plane of operation of said knife, a link connected with said rocking lever and said supporting table, a meat plate slidably mounted on said supporting table and operating in a plane angularly to the plane of operation of said supporting table and knife, a threaded shaft carried by said supporting table, a lever pivotally secured at one end to said meat plate, said lever having an intermediate threaded portion engaging said threaded shaft, means whereby said lever may be automatically disengaged from said shaft, a ratchet wheel mounted on said shaft, a stationary pawl engaging said ratchet wheel, a rack adjustably mounted, said rack having yieldingly mounted teeth adapted to be engaged by said ratchet wheel, and means whereby said rack may be anchored in its adjusted position.

In a meat cutting machine the combination with a revoluble knife of a sprocket Wheel therefor, a countershaft provided with a sprocket wheel on one end, a chain cooperating with said sprocket wheels, a gear mounted on the opposite end of said countershaft, a main driving shaftprovided with a gear adapted to mesh with the gear of said countershaft, a radial arni. mounted on the gear of said countershaft, a link pivotally connected with said radial arm, a rocking lever pivotally connected with a stationary part and with said link, a supporting table reciprocating in the plane of operation of said knife, a link connected with said rocking lever and said supporting table, a meat plate slidably mounted on said supporting table and operating in -a plane angularly to the plane of operation of said supporting table and knife, a threaded shaft carried by said supporting table, a lever pivotally secured at one end to said meat plate, said lever having an intermediate threaded portion engaging said threaded shaft, a spring actuated plun ger connected with said threaded lever to normally hold the same out of engagement with said threaded shaft, said plunger having a notch located between its ends, a spring actuated lever carried by said meat plate and having a portion adapted to engage the notch of said plunger, a stationary stop adapted to engage said spring actuated lever to throw the same out of engagement with said plunger, and means effecting rotation of said threaded shaft.

In a meat cutting machine the combination with a revoluble knife, of a supporting table reciprocating in the plane of operation of said knife, a main driving shaft, gearing mechanism connecting said driving shaft and said revoluble knife, pivotally mounted links connected with said gearing mechanism and supporting table, a threaded shaft carried by said supporting table, a meat plate slidably mounted on said table, a threaded lever connected with said meat plate and cooperating With said threadedshaft thereby serving to reciprocate said meat plate, a s ring actuated plunger connected with said threaded lever normally holding the same out of engagement with said threaded shaft,

In a meat cutting machine the combination with a revoluble knife, of a supporting table reciprocating in the plane of operation of said knife, a main driving shaft, gearing mechanism connecting said driving shaft and said revoluble knife, pivotally mounted links connected with said gearing mechanism and supporting table, a threaded shaft carried by said supporting table, a meat plate slidably mounted on sa d table, a threaded lever connected with said meat plate and cooperating with said threaded shaft thereby serving to reciprocate said meat plate, a s ring actuated plun 'er connected with said tlireaded lever norma ly holding the same out of engagement with said threaded shaft, a plunger having a notch located between its ends, a spring actuated lever carried by said meat plate and having a portion adapted to engage the notch of said plunger, a stationary sto adapted to engage said spring actuated ever to throw the same out of engagement with said plunger, a ratchet wheel mounted on said shaft, a stationary pawl engaging said ratchet wheel, and a rack ad,

In a meat cutting machine the combination with a revoluble knife, of a meat plate slidably mounted on said table and having a .meat holder comprising a rigidly mounted member having downwardly projecting teeth and located on one side of said meat plate, a rigidly mounted member located on the opposite side of said meat plate and provided with apertures arranged in vertical alinement, a prong bar adapted to en age the apertures of said last mentioned Inem er, said bar having a movable tooth member adapted to engage the downwardly projecting teeth of said first mentioned member,

In a meat cutting machine the combina table, means efiecting reciprocation of said table and rotation of said knife, a meat plate slidably mounted on said table, mechanism efiecting reciprocation of said plate, a spring actuated plunger carried by said plate having an enga ing notch, a s ring actuated lever adapte to enga e t e notch of said plunger, and a stop a apted to engage said spring actuated lever to trip the same and release said plunger thereby interrupting movement of said meat plate.

In a meat cuttin machine the combination with a revoluble 'fe, of a supportin table, means effecting reciprocation of sai table and rotation of said knife, a meat plate slidably mounted on said supporting table, means eflecting recirocation of said meat plate said means inc udim a threaded shaft revolubly mounted on said supportin table, a ratchet wheel secured on said s aft, a spring pawl or detent en aging said ratchet wheel, a rack adapted to Iie engaged by said ratchet wheel during the reciprocation of said sup orting table thereby serving to rotate said threaded shaft, and means connect ing said meat plate with said threaded shaft.

In a meat cutting machine the combination with a revoluble knife, of a supporting table, means effecting reciprocation of said table and rotation of said knife, a meat plate slidably mounted on said supportin table, means effecting reciprocation of sai meat plate including a threaded shaft revolubly mounted on said supporting table, .a lever connected with said meat plate and engaging said threaded shaft, a ratchet wheel secured on said shaft, a s ring pawl or detent engaging said ratchet Wli eel,.a rack adapted to be engaged by said ratchet wheel during the reciprocation of said supporting table thereby serving to rotate said shaft, said rack havingspring mounted teeth displaceable in the direction of their length, and means whereby said rack may be-adjusted to different positions and anchored in its adjusted positions.
