IMPROVED CHEESE-CUTTER.
The Schedule referred to in these Letters Patent:` and making part rof the same.
To all lwhom it may concern Be it known that I, J. G. Denman, M. D., of Pine Grove, in the county of Schuylkill, and State of Pennsylvania, have invented a new and useful Improvement in Cheese-Cutters; and I do hereby declare that the following is a full, clear, and exact description thereof, which will enable others skilled in the art to make and use the same, reference being had to the accompanying drawings, brming part of this specification.
This invention relates to improvements in cheesecutting apparatus, whereby it is designed to provide a means for cutting it with accuracy,'ease, and without waste.

A represents a circular table, which may be snpportedin any suitable manner, and provided with a radial slot, B, for the passage of the cutter, and with other radial slots, wherein conical rollers, C, are arranged upon suitable bearings at each end. At theV centre of the. table a holding-pin, D, is placed.
The cheese to be cutis centred upon this pin, and rests on the rollers, on which it may be rotated easily by a hand-pawl, E, Jivoted'to a radial arm, F, shown in dotted lines in rig. 3, oscillating around the central pin, which projects through the table, and supported at the outer end by a curved rim, Gr.
H represents the knife, which may be made of any preferred curved form, and connected to a handle, I, pivoted to a stud, K, rising up from the .support ofthe table. The said handle may be made wholly of metal, or partly of metal and partly of wood, and for the purpose of secmingthe wood-portion, a socket, L, may be formed on the shank of the handle.
M represents a guide, secured to the bracket K, to prevent the knife from yielding in that direction, whichis more likely to occm', than in the other direction, supposing the cheese to be fed up to the knife from left to ri ht.
` gN represents a stop for holdingthe knife in an elevated position, arranged to be turned on its pivot into the path of the knife after it has been raised.
In some cases, when the, cheese is very thick, Ait may be necessary to provide more efiicient guides for the point of the knife.
For this purpose, I propose to provide a centre-pin, O, of greater length, which may be secured to the table by a collar on the upper face of the latter, and a nut and screw below, after the radial arm F has been attached thereto, as represented in iig. 2; and to this pin, which passes through a central .hole made in the cheese, I connect two curved braces, P, one on each side of the knife,- and secure them at their base to the tableA, as represented in iig. 3, between which the knife may operate, and be guided thereby, as will be clearly understood.
The pins D and O may be grooved on the face, coincident with the point of the knife, to admit the latter .to cut to the centre of the cheese.
Having thus described my invention,
I claim as new, and desire to secure by Letters Patentl. A cheese-cutting apparatus, consisting of a circular or other formed table, A, provided with `thc slots and'rollers and a knife, H, substantially as and for the purpose described.
2. vThe combination, with the table, of the pins D or O, guides P, and vibrating hand-pawl E, all substantially as and for the purpose described.
3. The arrangement, with the knife, pivoted on the stud K, of the guide M, substantially as and for the 'purpose described.
4. The combination, with the table A and the knife, of the stop N, when all arranged substantially as and for the purpose specied.
