Be it known that l, REN MTIvI, a citizen of the United States, residing at New York, in the county of New York and State of New York, have invented new and useful Improvements in a Combined Press and Bain-Marie, of which the following is a specification.
This invention relates to presses for extracting the juices from ducks and other fowls and from other meats when desired, and also to bain-maries for receiving such juices from the press; and the object thereof is to provide improved devices of this class which are simple in construction and operation and which may be conveniently used wherever devices of this class are required.
The bain-marie herein shown and described is not claimed in this application, but is made the subject of a divisional application filed on the 28th day of January, 1905, Serial No. 243,018.
My said invention is fully disclosed in the following specification, of which the accompanying drawings form a part, in which the separate parts of my improvement are designated by suitable reference characters in each of the views, and in which- Figure 1 is a side elevation of my improved press and showing the bain-marie thereunder in position to receive the juices of the fowl or other meats discharged from said press; Fig. 2, a sectional side view of the press shown in Fig. 1, the section being taken centrally and transversely of the press; Fig. 3, a plan view of a detachable and radially-grooved bottom drainer employed in the press; Fig. 4, a side view of an internal strainer forming a part of the press; Fig. 5, an end view of the press as shown in Fig. 1 and showing the bainmarie thereunder; and Fig. 6, a view similar to Fig. 5, but showing the parts in a different position and not showing the bainmarie.
In the practice of my'invention as shown in the drawings I provide a press Vwhich comprises a receptacle 1, which forms the body portion of the press and is supported by legs 2, and in the form of construction shown the receptacle or body portion 1 of the press is slightly oblong in form, but may be circular, round, or of any desired shape in cross-section, and said receptacle is provided with a bottom 1n, which is downwardly inclined from the outer edges thereof to the center thereof, where it is provided with a discharge pipe, spout, or outlet 1b, and in the form of construction shown a plate 1c is secured to the bottom of the receptacle or body portion of the press and with which the legs 2 are connected; but this feature of the construction is immaterial and said legs may be connected with the body portion of the press in any desired manner.
lVithin the receptacle 1, which forms the body portion of the press, is placed a strainer 3, the form of which in plan view corresponds with the form of 4the receptacle or body portion 1, and said strainer is provided at or on the outer surfaces or walls thereof with vertically-arranged members or devices 3, by which it is held concentrically in the receptacle or body portion 1, so as to form around said strainer when it is in position a space or chamber 3b, and said strainer in practice is composed of sheet metal and is open at the top and bottom and is perforated throughout, as shown at 3C.
Below the strainer 3 is placed a removable false bottom forming a drainer 4, the perimeter or outer edges of which rest on the perimeter or outer edges of the inclined bottom 1l of the receptacle or body portion 1 of the press, and said drainer, a plan view of which is given in Fig. 3, is provided with radial grooves 4a, and the perimeter or edge thereof is provided with corresponding convolutions or recesses 4b, and in the operation of the press the juices compressed from the fowl or other meats flow downwardly and outwardly through the radial grooves 4a and through the convolutions or recesses 4.b onto the inclined bottom l of the receptacle or body portion 1 of the press and down through the discharge spout or pipe 1b into the bainmarie 14, which is placed under the press, as shown in Figs. 1 and 5.
At opposite points on the body portion of the press are upright members 7, preferably formed integrally with the bottom of the press and provided with upwardly-extending members 7, which extend above the body portion of the press and are provided in the opposite sides thereof with laterally-arranged recesses 8, which open outwardly and which are adapted to receive the ends of a pressurebar or cross-head 9, and the recesses 8 are provided with upwardly-extending supplemental recesses 8, adapted to receive upwardly-directed lugs or projections 10 on the ends of the pressure-bar or cross-head 9, and the pressure is applied or exerted by means of a pressure plate or follower l1, adapted to IOO IIO
lit loosely in the strainer' 3 and connected centrally with a screw 12, which passes up through the pressure-bar or cross-head 9 and is operated by means of a wheel, lever, or similar device 13.

The operation of the press will be readily understood when taken in connection with the accompanying drawings and the following' description. The drainer 4 and strainer 3 being placed in position, the duck or other fowl or any meat the juices of which are to be extracted is placed in the strainer 3 and the pressure device 0r follower 11 is inserted into the strainer, as shown in Fig. 2, and the pressure-bar is manipulated so as to lock the parts together, after which the screw 12 is manipulated so as to force the pressure device or follower 11 downwardly onto the fowl or meat from which the juices are to be eX- tracted. In this operation all the juices of the fowl or meat arc compressed and forced therefrom and pass downwardly over the drainer 4. and through the outlet 1, as hereinbefore described. It will also be understood that any desired form of bain-marie or any suitable receptacle may be employed for receiving the juices as they ow from the outlet 1b, and the invention described and claimed herein is not limited to any particular receptacle for this purpose.
The press described and claimed herein is particularly adapted for pressing the juice out of ducks or other fowls, but may be advantageously employed for pressing' the juice out of any meats, and in order to obtain the best results the said fowls or meats must be pressed quickly, and for this purpose l have devised a press the operative parts of which can be quickly placed in position for use and quickly detached or separated whenever necessary, and it is for this purpose that I devised my right and left lockingbar or cross-head 9, constructed and operating in the manner described, and a few turns of the screw 12 in the proper direction will accomplish the desired result of pressing' the fowl or meat, so as to force all the juices therefrom, and the oval form of the press herein shown and described also particularly adapts it for use in connection with ducks and other fowls; but, as herein stated, any desired form of press may be employed, and the oblong form of the press shown and described also prevents the turning of the follower 11 when the screw 12 is operated; otherwise it might be necessary to provide guides for said follower.
The drainer @t herein shown and described is comparatively flat on the top surface except for the radial grooves formed therein, and said grooves are so formed as to increase indepth from the center of said d rainer outwardly, and said d rainer is made of such material and of such thickness as to possess all the necessary strength to withstand the pressure applied thereto, and thus to form a solid rest or support for the body of the duck or other fowl or for any meat pressed thereon, and the radial grooves in the top thereof and the convolutions or notches or recesses in the perimeter thereof form complete drains for the eX- tracted juices, which flow downwardly onto the concave or inclined bottom of the press and out through the outlet 1b, as hereinbefore described.
Having fully described my invention, what I claim as new, and desire to secure by Letters Patent, is-
1. A press of the class described, comprising a body portion forming a receptacle, the bottom of which is inclined from the edges thereof to the center thereof and provided with an outlet, a drainer placed in the bottom portion of said receptacle and comprising a plate provided in its top surface with radial grooves the depth of which increase from the center of said plate outwardly and the outer ends of which form notches or recesses in the edges of said plate, a strainer placed on said d rainer, said strainer being' similar in form to said receptacle and of less dimensions and open at the top and bottom and the walls thereof being perforated, and a vertically-movable plunger or follower operating in said strainer, substantially as shown and described.
2. A press of the class described,comprising a body portion forming a receptacle, the bottom of which is inclined from the edges thereof to the center thereof and provided with an outlet, a drainer placed in the bottom portion of said receptacle and comprising a plate provided in its top surface with radial grooves the depth of which increase from the center of said plate outwardly and the outer ends of which form notches or recesses in the edges of said plate, a strainer placed on said drainer, said strainer being similar in form to said re cep'zacle and of less dimensions and open at the top and bottom and the walls thereof being perforated, and a vertically-movable plunger or follower operating in said strainer, said plunger or follower being provided with a screw threaded shaft passing centrally through a cross-head detachably connected with the top of the receptacle, substantially as shown and described.
