CHEESE-CUTTER.
SPECIFICATION forming part of Letters Patent No. 710,672, dated October '7, 1902.

To aZZ whom it may concern:
Beitknown that I, XVALTER G. DOTY, acitizen of the United States, residing in Middletown, Butler county, Ohio, (post-office address No. 51 Fairmount avenue, Middletown, Ohio,) have invented certain new and useful lmprovemen ts in Clieese-Cuttcrs,of which the following is a specification.
Thisinvention pertains to improvements in cheese-cutters designed forcounter use in provision stores, and the improvements will be readily understood from the followingdescrip tion, taken in connection with the accompanying drawing, which is a perspective view of my improved cheese-cutter, a portion of the turn-table being broken away.
In the drawing, 1 indicates a circular base adapted to set upon acounter; 2, an upstanding concentric flange upon the base, the same having an interior diameter somewhat greater than that of the largest cheese the device is intended to deal with; 3, antifriction-wheels mounted in the base somewhat inwardly from flange 2; at, a circular turn-table having its center pivoted at the center of the base and having its outer portion resting upon the wheels 3, the diameter of this turn-table being somewhat less than the diameter of the base at flange 2; 5, the central pivot of the turn-table, the same being journaled in an eye at the center of the base, the duty of this pivot so far as the turn-tableis concerned being merely to maintain the turn-table in concentric relationshipto the base, the load upon the turn-table being supported by the wheels 3; 6, spurs projecting upwardly from the surface of theturn-table and adapted to penetrate a cheese placed upon the turn-table and prevent the shifting of the cheese upon the turn-table; 7, a rigid bracket projecting upwardly from the base exterior to the inner surface of flange 2, the upper portion of this bracket projecting inwardly to a point near the axial line of the turn-table, the height of bracket 7 under its horizontal portion being somewhat in excess of the greatest height of cheese which the device is to deal with; 8, an elbow-shaped knife-frame provided with a handle and having the extremity of one of its arms pivoted to the inner extremity of bracket 7, the axis of the pivot being horizontal; 9, an elbow-shaped knife attached to the knifeframe, and when the frame and knife are depressed presentinga vertical edge at the axial line of the turn-table and presenting a horizontal edge against the tu rn-table; 10,a spring connected with the knife-frame and bracket and serving to normally support the knifeframe and knife in elevated position; 17, a radial arm havingits in nerend swiveled upon the pivot 5 of the turn-table, this arm extending outwardly below the turn-table and having its outer end projecting through a slot in flange 2 and formed into an index-pointer, the general projection of arm 17 being diametrically opposite bracket 7; 18, a scale of graduations secured upon the base and adapted to be swept by the index end of arm 17; 19, a thin blade having its outer end supported by a pivot carried by a standard projecting upwardly from near the outer portion of arm 17, blade 19 being adapted to project radially inward or to be turned up vertically, and 20 a spring connected with arm 17 and the base and serving to normally hold arm 17 and its index-pointer to a zero position at one end of the series of graduations upon the scale 18.
The cheese is to be placed concentrically upon the turn-table, the spurs 6 then maintaining such relationship. The turn-table and cheese can then be readily and easily turned, as desired, and the knife operated in an obvious manner to cut sector-shaped pieces therefrom.
It is to be observed that no preliminary piercing of the cheese is required, and also that no parts of the apparatus project below the counter upon which the base rests.
The scale 18 and its accessories constitute a weight-measuring device somewhat improved in construction over a similar device heretofore invented and patented by me in Patent No. 563,988. The scale 18 is graduated to indicate the weight of sectors of cheese of given entire weight, the scale being detachable from the base, and a number of them being provided, so as to take care of cheeses of different weights. Arm 19 being turned inwardly and resting upon the last cut surface of the cheese, representing the cuttingplane of knife 9, and the pointer standing at zero on the scale, the turn-table and cheese is to be turned till the pointer comes to the de sired intention of weight upon the scale,
whereupon the knife is to be depressed, thus severing the measured sector of cheese. In dealing with a new and uncut cheese the blade 19 is turned up out of the way and later turned down into the first cutting-crack produced by the knife.
I claim as my invention 1. In a cheese-cutter, the combination, substantially as set forth, of a base, a turn-table mounted thereon and adapted for the support of a cheese, a bracket projecting upwardly from said base exterior to said turn-table and having an arm projecting inwardly rigidly above the top of the cheese toward the axial line of the turn-table, and a knife connected with the arm of said bracket by a horizontal pivot and having edges corresponding with the radius and axis of the turn-table when the knife is depressed.
2. In a cheese-cutter, the combination, substantially as set forth, of a base, a turn-table mounted thereon and adapted for the support of a cheese, a bracket projecting upwardly from said base exterior to said turn-table and having at its top and above the top of the cheese a rigidly-projecting horizontal arm, an elbow-shaped knife-frame provided and knife-frame and serving to support the knife-frame and knife in an elevated position.
3. In a cheese-cutter, the combination, substantially as set forth, of a base, a turn-table mounted thereon and adapted to support a cheese, a movable knife supported by said base and adapted to out sector-shaped pieces from-a cheese resting on said turn-table, a removable scale of graduations supported by said base below the plane of the turn-table, an arm pivoted to said base at the axis of the turn-table and havingits outer ends extending through a slot in said base and formed with a pointer extending over said scale of graduations, and a blade pivoted to said arm and adapted to project inwardly and radially over said turntable.
