'TO ,ALL WHOM IT MY CONGERN:
Be it known that I, GUSTAVUS PERKINS, of the city of Burlington, in the county of Chittenden, and State of Vermont, have invented a new and improved Machine for the Purposes of Rolling Dough, Working Butter,"
and Chopping and Mangling Meats or Fruits, as also for crushing sugar, salt, crackers, Snc.; and I do hereby declare that the following is a full and exact description thereof, reference being had to the accompanying drawings, and to the letters of reference marked thereon. l

The nature of my improvement consists in making the rollers of metal, and of sutlicient weight to furnish all the vertical pressure required, thus obviating the necessity of any vertical pressure by the hands; the rollers to he placed in proper arms, which areto have gauges ixed thereto, so that any substance can be rolled to any desired even thickness. The said arms are made to work through a cross-head which is secured to a pair of standards so placed as to allow the rollers to play through them on the board or table. My improvement further consists in constructing one of my metal rollers with a diamond-raised surface, for the purpose of mangling meats; the said mangling rollers to be also fitted with slots in either end, so as to receive a series of knives, all for the purpose of chopping meats, fruits, tito. The above mangling and chopping rollers to be both combined iu one, as above described, or entirely" separate.
To enable others skilled in the art to make and use my improvement, I will proceed to describe its coustruction and operation. Y
I construct my frame, a a, into which'I securely fastenv my standards, b b, by mortise or otherwise. At the upper end of the standards b b I cut the holes c e, for the purpose of receiving the cross-head d', the arbors of which are allowed free play through the holes c c. I next construct the table and frame e e e, with one end, f,
so constructed as to lift out so as to allow the upper board or slab t9 be taken out or placed at will, the Whole' table and frame e e e to be held in place on the frame a a by means of strong cleats underneath the table, so arranged as to prevent any movement of the table whatever while the rollers are in use. I now place my metallic dough-roller in the arms ii; it being easily adjusted and held in place by means of the slide-piece J, which, in turn, is securely locked-by the screw lc. The arms z'z' are allowed free play through the holes Z l, in the cross-head d, which holes also regulate the head of the arms and keep them directly over the table e e. The roller h is adjusted (raised or lowered) to roll to any-desired thickness by the means of the gauges lml m on either arm, the gauges being held in position by the thumb-screwsn n; the gauges are allowed free play through the plates o o. When in operation the roller h descends until the gauge-wheels P P strike the top or rim of the frame and table e e e, which insure an even thickness throughout the board or table. All lateral motion of the roller L is prevented by the arms iz' going below the rim or frame of the table e e. The lower parts of the arms z'z' are Aheld together by the cross-arm S. This arm is also used as the handle to move the rollers to and fro when in use. To adjust the machine for the purpose of mangling meats, I place the diamond-surface metallic roller Q, iig. 2, in the arms z' i, in the' same manner as prescribed for the roller L. To adjust for chopping meats, fruits, 85e., I place the knife roller R, iig. 3, in the same manner. The rollers h Q and R to be yof metal, hollow or solid; the gauges m m, wheels PP, plates o o, as also all thumb and other screws, to be of iron or other metal. All the rest of the machine, such as frame a a, standards b Z7, frame and table e e e, cross-head d, arms iz', cross-arm S, and table or frame eudf, to be constructed of wood.
What I claim as my improvement, and desire to secure by Letters Patent, is
The combination of the metallic rollers h, Q, or B1, the gauges tum, the arms z' z', as applied to above purpose; also the constructionof the entire machine, all as herein substantially described, and for the purposes set forth.
